Ingredients
1medium baking potato
1tspolive oiloptional
Instructions
Wash the skin of the baked potato and pat dry with a piece of kitchen roll.
Pierce the jacket potato multiple times with a fork.
Place the jacket potato on a microwaveable plate and cook for 8 to 10 minutes, stopping half way to turn the potato over.
Check the potato is cooked all the way through by piercing it with a sharp knife. It should be soft in the middle. If it isn't, pop it back in the microwave for another 2 minutes. Repeat until it is cooked through.
For a crispy skin, brush a little oil over the skin, and sprinkle a little salt over. Place in a preheated oven (220C/200C/Gas Mark 7) for 10 to 15 minutes.
Slice the potato open and add your favourite toppings.
