This mince and potato soup is a hearty and comforting soup maker recipe made with beef mince, potatoes, and vegetables in a rich, savoury broth. Simple to prepare and full of flavour, it’s ideal for a quick family meal or a warming lunch on the go.
250glean beef mincebrowned first for extra flavour, or add raw if preferred
1onionchopped (fresh or frozen)
2garlic clovescrushed (or 1 tsp garlic purée)
300gmedium potatoeschopped
400gtin chopped tomatoes
150gfrozen mixed vegetablespeas, carrots, sweetcorn, green beans etc.
1tspWorcestershire sauce
1tspdried mixed herbs
1beef stock pot or cube and hot water up to the MAX line
Salt and black pepperto taste
Instructions
Brown the mince with the onion and garlic in a frying pan (optional for extra flavour). Drain off any fat.
Add the mince (browned or raw), potatoes, chopped tomatoes, beef stock cube, Worcestershire sauce, dried mixed herbs, beef stock pot or cube, seasoning to the soup maker and then top up with hot water to the MAX line. Stir everything together and then if more space has been created, add more hot water.
Select the chunky setting.
At the end of soup maker cycle, check the soup and season with salt and pepper if needed. Optionally use the blend or pulse button to quickly blend it for 1 burst to chop up the ingredients a little bit and change the consistency.
