This beef and vegetable soup is the ideal comfort food. It’s filling and so simple to make in a soup maker. It’s the ideal one-pot meal that’s perfect for lunch or dinner.

What You Need to Make Mince and Potato Soup

Beef
Lean beef mince works best. You can brown it first with the onion and garlic for a richer taste, or add it straight into the soup maker if you’re short on time.
This recipe uses beef mince due to the cooking cycle time of most soup makers. If you prefer to use chunks of beef you will need to do it in a pan on the hob, or in a slow cooker as it needs to be cooked for a longer length of time to enable it to soften up.
Onion and garlic
You can use fresh, frozen, or even onion and garlic purée if you want to make prep even easier.
Potatoes
Chopped potatoes make the soup thick and comforting. I used Maris Pipers and cut them into small cubes so they cook evenly.
Chopped tomatoes
A single tin of chopped tomatoes adds just the right amount of richness and flavour to the base without making it too tomato-heavy.
Beef stock
I added an Oxo beef cube, you can use your favourite stock pot or cube. Then top up with hot water to the MAX line.
Mixed vegetables
Frozen mixed vegetables are perfect here. Peas, carrots, sweetcorn, or green beans all work well; just use whatever you have to hand. If you have fresh, use them instead.

Worcestershire sauce and dried mixed herbs
This simple mix of seasonings brings everything together beautifully. Finish with salt and pepper to taste once the soup is cooked.
Making It
If you have time, start by browning the mince with the onion and garlic in a frying pan. It adds a deeper flavour to the soup, but if you’re in a hurry, you can skip this step and add everything straight into the soup maker.

Next, add the mince (browned or raw), chopped potatoes, chopped tomatoes, beef stock, Worcestershire sauce, dried herbs, and a pinch of salt and pepper to the soup maker.
Tip in the frozen mixed vegetables and then pour hot water in from the kettle. Give everything a bit of a stir and add any more hot water to get it up to the MAX line.
Select the chunky setting and let the soup maker do the work. Once it’s done, give the soup a stir, and taste to see if it needs a little more seasoning before serving. I also like to give the soup a very quick and short blend/pulse to change the consistency and chop up some of the ingredients a little bit more.

Serving Suggestions
Serve hot with some crusty bread or a buttered roll. It’s also ideal for pouring into a food flask for a warm, filling lunch on the go.
Storing Leftovers
Keep any leftovers in the fridge for up to three days and reheat until piping hot. This soup also freezes really well, just let it cool completely before portioning into freezer-safe containers. Defrost overnight in the fridge and reheat when you’re ready to enjoy it again.

Ingredients
- 250 g lean beef mince browned first for extra flavour, or add raw if preferred
- 1 onion chopped (fresh or frozen)
- 2 garlic cloves crushed (or 1 tsp garlic purée)
- 300 g medium potatoes chopped
- 400 g tin chopped tomatoes
- 150 g frozen mixed vegetables peas, carrots, sweetcorn, green beans etc.
- 1 tsp Worcestershire sauce
- 1 tsp dried mixed herbs
- 1 beef stock pot or cube and hot water up to the MAX line
- Salt and black pepper to taste
Instructions
- Brown the mince with the onion and garlic in a frying pan (optional for extra flavour). Drain off any fat.
- Add the mince (browned or raw), potatoes, chopped tomatoes, beef stock cube, Worcestershire sauce, dried mixed herbs, beef stock pot or cube, seasoning to the soup maker and then top up with hot water to the MAX line. Stir everything together and then if more space has been created, add more hot water.
- Select the chunky setting.
- At the end of soup maker cycle, check the soup and season with salt and pepper if needed. Optionally use the blend or pulse button to quickly blend it for 1 burst to chop up the ingredients a little bit and change the consistency.
