Ingredients
800g-1kg parsnipsreduce or increase accordingly
80gbutter or margarine
100mlmilk or cream

Instructions
Peel and chop the parsnips.
Put the parsnips in a large saucepan and cover them with water and a few pinches of salt.
Bring the water to a boil and reduce to a simmer. Leave to cook for 10 to 15 minutes, until tender. Don't let them overcook and turn to mush.
Drain the water away and use a potato masher to mash the parsnips up. If you are making a parnsip puree you can put the parsnips in a blender, food processor or use a hand blender.
Stir in the butter and milk/cream. Only add a little bit of milk/cream at a time, adding more until the mash is a the consistency you like.
Add in any seasoning as desired to taste.
Notes
Optional ExtrasAdd in a peeled and chopped Bramley apple with the parsnips when you boil them.Stir in some chilli flakes at the end for a little bit of a spicy kick.Stir in some cinnamon for a warming spice twist.
