Ingredients
500gred cabbageroughly chopped
1x 400g chopped tomatoes
1onionchopped
1carrotschopped
1sticks of celerychopped
2clovesgarliccrushed
1teaspoondried thyme or mixed herbs
2tablespoonsapple cider vinegar
1vegetable stock pot/cubeand hot water to line
Salt and freshly ground black pepperto taste
Instructions
Wash and chop the red cabbage, onion, garlic, carrots and celery.
Add all the ingredients, including the vegetable stock pot. Add water up to the line - I like to add hot water but you can use cold water if you prefer.
Put the lid on the soup maker and select the chunky soup cycle.
At the end of the chunky soup cycle, carefully remove the lid and check the consistency. For a different texture you can pulse the soup a few times to make it thicker, or, you can leave it as it is.
Check the soup for taste and add any additional seasoning if required. You could optionally serve with some natural yoghurt or crème fraîche.
Notes
You can use more or less red cabbage. I cut a large cabbage in half and it weighed about 500g - but this doesn't have to be an exact amount.
