Ingredients
200gred lentilsrinsed
1large onionchopped
2clovesof garlicminced
1medium carrotchopped
1red bell pepperchopped
1tin of 400g chopped tomatoes
Vegetable stock pot or cube
1-2tablespoonsharissa pasteadjust to your heat preference
Fresh coriander for garnishoptional
A dollop of yoghurt or crème fraîche for servingoptional

Instructions
Place the rinsed lentils, chopped onion, crushed garlic, chopped carrot, bell pepper, and the entire tin of tomatoes into the soup maker.
Add the harissa paste to the soup maker.
Add the vegetable stock pot/cube into the soup maker and top up with hot water to the line.
Close the lid of the soup maker and set it to smooth. Depending on your model soup maker, this will typically cook the ingredients for about 20-30 minutes.
Carefully taste the soup and adjust the seasoning with salt and pepper. If you want a spicier soup, you can also add more harissa paste.
Pour the soup into bowls, adding a little yoghurt or crème fraîche and some fresh coriander if desired.
Notes
Some users report burning on the base of certain soup maker models. To avoid this, you can add a little oil to the base, but also make sure you have adequate stock/water to boil and simmer the red lentils. Also, give the mixture a stir before setting the soup maker off to prevent any lentils or tomatoes from resting on the base of the soup maker.
