Roasted sweet potatoes are deliciously crispy on the outside and soft and tasty on the inside.

Ingredients
4large sweet potatoes
2onions
2clovesgarlic
2tbspolive oil
Salt and pepper
2tspspices*
Instructions
Preheat oven to 200C/Gas Mark 6
Chop sweet potatoes into 1/2 inch sized cubes. Peeling the skin from the sweet potatoes is optional. I prefer to leave them on, just giving them a really good wash and scrub beforehand.
Chop onions into chunks and slice the garlic cloves.
Place sweet potatoes, onions and garlic in a large bowl.
Drizzle 2 to 3 tbsp of olive oil over them and shake/toss the ingredients ensuring they are all covered.
Sprinkle seasoning over ingredients and shake/toss again, coating as much of the sweet potato as you can.
Transfer to a baking tray. Make sure the sweet potato is spread out and not over lapping, plenty of space is needed to ensure they roast all over. Use 2 baking trays if needed.
Cook for 30 minutes, turning over at 10 minute intervals.
The sweet potato should be crispy on the outside and soft on the inside when ready.
Notes
Try out different spices on the sweet potatoes. Chilli powder, cayenne and smoked parprika are all good choices.
