Ingredients
3tbspolive oil
400gnew potatoeswashed and sliced in half
1red onion
4clovesgarlicpeeled and gently smashed
200gcherry tomatoes
2 to 3sweet peppersdeseeded and chopped
1courgettechopped
2tspdried mixed herbsor spices of your choice
Salt and Pepper according to taste
Instructions
Preheat oven to 200C/180C Fan/Gas Mark 6.
Prepare the vegetables by washing and chopping ingredients to a similar size.
Add vegetables to a baking tray and drizzle with 2 tbsps of olive oil. Toss the vegetables so that they are all coated. Season with herbs (or spices) and salt and pepper according to taste.
Place the baking tray in the preheated oven and cook for 15 to 20 minutes or until the potatoes are starting to soften.
Remove the baking tray from the oven and make some space to add the salmon fillets. Lightly brush the space with some oil before adding the salmon fillets. Drizzle/brush the remaining olive oil over each salmon fillet as well as squeeze some lemon juice over each one. Sprinkle with dried herbs/spices and optionally some salt and pepper.
Return the baking tray to the oven and cook for a further 10 to 15 minutes, or until the salmon is cooked through.
Optionally serve with some salad, or, serve as it is.
