Ingredients
1tbspolive oil
6sausages*
1red pepperchopped
3clovesgarliccrushed
400gchopped tomatoes
1tspdried oregano
1/2tspsmoked paprika
300gdried pasta
grated cheeseoptional to grate on top – Parmesan, Cheddar or Mozzarella work well
500mlchicken stock(or vegetable stock)
Instructions
Cut the sausage into bite-sized chunks.
Heat a large non-stick pan over medium heat. Fry for 5–7 minutes until browned.
Add the chopped red pepper and cook for another 2–3 minutes until slightly softened.
Pour in the chopped tomatoes and stock. Add the dried pasta, oregano, paprika, and a pinch of salt and pepper. Stir to combine.
Bring to a simmer, cover with a lid, and cook on a low-medium heat for 12–15 minutes. Stir occasionally to stop the pasta sticking. Add a splash more water if needed.
Serve hot, topped with grated cheese if desired.
Notes
* I used 6 sausages which when cut up was enough to feed 4 people when combined with the pasta and other ingredients. You could however use more sausages if you want to.
