Ingredients
250gplain flour
125gcold butterdiced
pinchsalt
Cold water
Instructions
Mix the flour and salt together in a large bowl.
Add the butter, and rub together between your fingers until it resembles breadcrumbs.
Add 3 tbsp cold water, and bring to a rough dough. Stop kneading as soon as it is combined, wrap in cling film, and store in the fridge for at least 30 minutes, until you are ready to use it.
Notes
Using cold water, minimising kneading and storing in the fridge keeps the butter from melting, which in turn gives the pastry its signature texture.
