Optionally sauté the beef in a little oil to seal it before adding it to the slow cooker.
Add all the remaining ingredients to the slow cooker pot and give everything a good stir.
Put the lid on and set off on low for 8 hours, or high for 4 hours.
Optionally stir in some coconut milk or yoghurt and leave with the lid off for the last 20 minutes while you cook a side to go with it. If the sauce is too thin, stir in a cornflour slurry (about 1 tbsp of cornflour mixed with 1 tbsp liquid, I use the liquid from the slow cooker)
Serve with fresh coriander for garnish and your choice of side.
