Ingredients
1onionchopped
3clovesgarliccrushed
2tbsp.curry powder
2x 400g chickpeasrinsed and drained
2x 400g chopped tomatoes/passata
2sweet peppersdeseeded and sliced
2large potatoes*peeled and diced
1/2tspsalt
1/2tspblack pepper
Instructions
Add all the ingredients to the slow cooker and stir together.
Set off on low for 6 to 8 hours.
Serve with rice and a green salad.
Notes
Substitute the potatoes with butternut squash or sweet potato if preferred.
