Slow cooker leek and potato soup is a simple, hearty meal that will fill your home with an amazing smell. It takes about 4 hours to cook in the slow cooker but it's worth the wait!

Ingredients
8potatoeschopped
3leekschopped
1onionchopped
2tbsp.butter
2x vegetable stock pots/cubes
1litre boiling water
Seasoning - salt/celery salt/black pepper
Optional: single creamcooked bacon and/or Stilton cheese
Instructions
Peel and chop potatoes to equal sizes and add to slow cooker.
Add leeks, onions and butter.
Dilute 2 stock cubes in 1 litre of boiling water.
Add stock to the slow cooker so that it just covers the ingredients. Add any preferred seasoning and stir everything together.
Set off on high for 4 hours, or low for 6 - 8 hours.
When finished - the ingredients should be soft - blend with a stick blender, or, transfer to a large blender. If you prefer a chunkier consistency, you might choose just to pulse or mash the soup with a potato masher.
Notes
As a variation, stir in some diced Stilton cheese at the end and garnish with some chopped crispy bacon.
