Ingredients
750gdiced pork
2onionschopped
2clovesgarliccrushed
1tbspDijon mustard
1x 400g tin chopped tomatoes
1tbsptomato puree
2carrotschopped
2leekschopped
2tspdried mixed herbs
2bay leaves
150mlvegetable stockfrom 1 stock pot
Instructions
Add all the ingredients to the slow cooker pot and mix them together.
Cook on low for 6 to 8 hours or high for 4 to 5 hours.
At the end of the slow cooking time, the pork should be cooked all the way through and the vegetables soft.
If the liquid is too thin, add one teaspoon of cornflour with a tablespoon of room temperature water.
Alternatively, stir in some gravy granules.
Notes
Vegetables: you can substitute leeks and carrots with alternative vegetables according to taste and availability.
