Ingredients
4chicken breasts
½tspsalt and ½ tsp pepper
200mlBBQ sauce
2tspsmoked paprika
1tbspbrown sugar
1chicken stock potin 50ml boiling water
1tbsplemon juice
1onionfinely chopped
1clovegarliccrushed
Instructions
Place chicken breasts in a slow cooker and season with salt and pepper.
In a jug combine the BBQ sauce, smoked paprika, brown sugar, chicken stock, lemon juice, onion and garlic.
Pour the mixture over the chicken in the slow cooker.
Place the lid on the slow cooker and cook on the low setting for 6 to 8 hours, or high for 3 to 4 hours.
Once the chicken is ready, use two forks to shred it. Either shred it directly in the slow cooker bowl (preferred) or remove it and shred it on a chopping board. The chicken should pull apart easily.
Stir the pulled chicken into the sauce to absorb all the flavour.
Served the pulled chicken in brioche buns, over tortilla chips, or with your preferred side dish. Optionally garnish with fresh coriander leaves.
