This simple Tuscan chicken recipe tastes delicious when cooked in a slow cooker. Add the ingredients to the slow cooker and after a few hours of slow cooking you’ll be enjoying some soft and tender chicken seasoned with Italian herbs and in a tasty cream sauce with parmesan cheese, sun-dried tomatoes, and plenty of spinach.
Add all the ingredients to the slow cooker apart from the cream, cornflour, spinach and optional cheese.
Set the slow cooker off on low for 4 to 6 hours or high for 2 to 3 hours. The chicken should be cooked all the way through (75°C).
15 minutes before the end of the cooking time, in a small bowl, whisk together the double cream (or coconut milk) and cornflour. Stir this into the slow cooker along with the spinach and cook for a further 5 to 10 minutes.
Taste the sauce and season with additional salt and pepper if needed.
Serve the Tuscan chicken hot, optionally topped with grated Parmesan cheese.

*If you can’t get any sun-dried tomatoes you can oven roast or air fry some fresh tomatoes.
