Slow Cooker Tuscan Chicken Recipe

This simple Tuscan chicken recipe tastes delicious when cooked in a slow cooker.

Add the ingredients to the slow cooker and after a few hours of slow cooking you’ll be enjoying some soft and tender chicken seasoned with Italian herbs and in a tasty cream sauce with parmesan cheese, sun-dried tomatoes, and plenty of spinach.

What You Need

The ingredients below are enough to comfortably feed 4 people, to make more or less you can scale the recipe accordingly. For more concise instructions and to print out the recipe please head to the recipe card at the bottom of the page.

  • 900g – 1.2kg boneless, skinless chicken thighs
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 100ml chicken stock, made from one chicken stock pot
  • 2 tsp dried Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 80g chopped sun-dried tomatoes, if you can’t get any sun-dried tomatoes you can oven roast or air fry some fresh tomatoes
  • 100ml double cream or coconut milk
  • 1 tbsp cornflour
  • 100g fresh spinach, chopped
  • Grated Parmesan cheese, optional, for serving

Making It

Add all the ingredients to the slow cooker apart from the cream, cornflour, spinach and optional cheese.

Set the slow cooker off on low for 4 to 6 hours or high for 2 to 3 hours. The chicken should be cooked all the way through (75°C).

15 minutes before the end of the cooking time, in a small bowl, whisk together the double cream (or coconut milk) and cornflour.

Stir this into the slow cooker along with the spinach and cook for a further 5 to 10 minutes.

Taste the sauce and season with additional salt and pepper if needed.

Serve the Tuscan chicken hot, optionally topped with grated Parmesan cheese.

  • Serving Suggestions: Tuscan chicken works well with creamy mashed potatoes, steamed vegetables, or a side of pasta.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat thoroughly before serving.
  • Optional: Adding a splash of white wine can add extra depth of flavour.
