Ingredients
3boneless chicken thighs* – if you are using a Ninja Soup Maker you can put them in raw or cooked.
1medium potatochopped – optional if you prefer a thicker soup
4tbspThai green curry paste
1tin x 400g coconut milk
1green chillichopped (optional for extra spice!)
1chicken stock pot + boiling water up to the line
Instructions
Cut up the chicken, or shred it if it is cooked.
Clean and chop the potato, there is no need to peel it. Adding a potato is optional for this soup - the coconut milk adds quite a bit of thickness to the soup but I like the smoothness that a potato brings to this soup.
Add everything to the soup maker jug, add in the chicken stock pot or cube and top up with hot water.
