Yoghurt Bark Recipe
A refreshing and healthy frozen treat made with yoghurt, berries, and a crunchy sprinkle of granola — perfect for summer snacking!

Ingredients

Greek yoghurt
or any thick yoghurt

tbsp
honey or maple syrup
optional, to sweeten

mixed berries
e.g. strawberries, blueberries, raspberries

Instructions
Line a small baking tray with baking paper — this will make it easy to lift the bark out once frozen.
In a bowl, stir together the yoghurt and honey or maple syrup, if using.
Pour the yoghurt mixture onto the lined tray and spread it out evenly to about 1cm thick.
Scatter the berries and granola evenly over the surface. Press down gently so they stick into the yoghurt.
Transfer to the freezer and freeze for at least 3–4 hours, or until completely solid.
Once frozen, lift out the bark and break into pieces. Store in a freezer-safe container and enjoy straight from the freezer.
Notes
Add chopped nuts, a swirl of peanut butter, or a few chocolate chips for extra flavour and texture.
Use dairy-free yoghurt to make it vegan.
You can use frozen berries straight from the freezer — no need to defrost first.
