Easy Chicken Soup Recipe

Chicken soup is a classic. It’s one of Britain’s favourite soups – it’s comforting, filling and thankfully, oh so easy to make!

My easy chicken soup recipe is just that – easy. It has minimal ingredients, all of which can just be added to your soup maker (or pot if you don’t have a soup maker!)

How To Make Chicken Soup (The Easy Way!)

Homemade Chicken Soup Ingredients

  • 200g cooked chicken, shredded – this is an approximate weight. 
  •  2 cloves garlic, crushed
  • 1 medium onion, chopped
  • 200g potatoes, scrubbed and diced
  • 1 litre chicken stock (approx)
  • 2tbsp creme fraiche/cream (optional)

As you can see, you need very few ingredients. I love to make chicken soup with the leftovers from a Sunday roast. It’s the perfect way to use up all the meat, assuming it doesn’t get swiped by the kids for their school sandwiches!

Side Note: I usually cook our chicken in the slow cooker, this means that we can easily get all the meat off the bone – there really is no food wasted. If you’ve never cooked your chicken in a slow cooker you really should try it – the meat is so soft.  You can also use the juices to make some homemade chicken stock – it tastes amazing.

If you don’t have leftover chicken to use up you can still easily make chicken soup – just cook up some chicken of your choice. If I’m craving a chicken soup and we haven’t had a roast chicken I’ll just cook up some chicken breasts and shred them. I do notice a different texture when I make chicken soup this way though, kind of like a more ‘grainy’ texture. I suppose because it isn’t as tender as it is when it is slow cooked.

How To Make Chicken Soup Thicker 

The potatoes thicken up the soup and make it smoother – you can add more or less, depending on your own taste. Also, cream or crème fraiche will also make it smoother and give you more of a ‘Cream of Chicken’ style soup, but this is totally optional. A lot of the time I won’t bother adding any and it still tastes great.

Simply add all the ingredients to your soup maker (leave any cream or crème fraiche until the end) and put the lid on. Set it off on smooth and you’re done!

If you don’t have a soup maker, you can still make this in a pot on the stove. Just add all the same ingredients and bring it to the boil. Turn it down to a lower heat and simmer for around 20 minutes, or until the potatoes are soft. Use a hand blender to turn it into a smooth soup, taking care not to allow the hot liquid to splash you.

Season the chicken soup according to your own taste.

Ingredients
  

  • 200 g cooked chicken shredded
  • 2 cloves garlic crushed
  • 1 medium onion chopped
  • 200 g potatoes scrubbed and diced
  • 1 litre chicken stock
  • 2 tbsp creme fraiche optional

Instructions
 

  • Add all the ingredients to your soup maker, except the creme fraiche (if using).
  • Ensure you don't go above the MAX line in your soup maker. If needed, top up to the MIN line with hot water.
  • Put the lid on and select the smooth setting.
  • If you are adding creme fraiche, add it at the end of the cycle by stirring it in.
  • Season according to taste.

Notes

To change the consistency of your soup you can add more or less potatoes. The more you add, the thicker it will be.

Hello I e joined this group because I can only eat smooth watery soups , I want fresh ingredients to nourish my body. I’m going through radiation treatment for head and neck cancer , I cannot eat anything chunky. How can I keep the soups watery ?

Hi Carolanne - sorry to hear you are going through treatment for cancer. If you need the soups to be watery, I would recommend reducing the amount of ingredients and adding more stock. Alternatively, you could make the (smooth) soups according to the recipe and then at the end stir in some more hot stock to make it thinner according to how you want it. I hope that helps, sending lots of positive energy your way x

Regarding using raw chicken in this recipe how small would the pieces of chicken need to be to cook in 25/30 minutes. thankyou

Hi Gwen - I just chop them up into approx one inch cubes - I'm assuming you have a Ninja soup maker? Just because not all soup makers recommend cooking meat from raw.
