This Mediterranean vegetable soup is full of goodness and flavour from a variety of different ingredients. Switch the vegetables according to what you have available, pop them all in the soup maker and you’ll soon be enjoying this tasty Med veg soup.
What You Need
As with most soup maker recipes you can adjust the ingredients according to what you have available. Use the following as a guide (to print out this recipe head down to the recipe card at the bottom of the post).
Remember that weights are an approximate guide and can be adjusted.
- Courgettes – I used one large courgette which weighed about 300g after chopping it up.
- Peppers – I used half a red and half a yellow sweet bell pepper. You can use any colour.
- Onion – I used a red onion.
- Garlic – I used 2 cloves of garlic, crushed.
- Tomatoes – I used 4 tomatoes, chopped. Tomatoes on the vine are a good choice for the flavour but use what you have available.
- Chickpeas – I used a 400g tin of chickpeas.
- Tomato puree – I used 1 tbsp.
- Seasoning – I used 1 tsp of dried mixed herbs and 1 tsp ground black pepper.
- Stock pot – I used 1 vegetable stock pot, added directly to the soup maker jug and topped up with hot water to the maximum line.
Making Mediterranean Vegetable Soup In A Soup Maker
Prepare the vegetables by washing and chopping the courgette, peppers, tomatoes. Peel the onion and garlic cloves, chop the onions and crush the garlic.

Add all the ingredients to the soup maker jug.
Pour water up to the maximum line – I use hot water but some people prefer to use cold.
Put the lid on the soup maker and choose the ‘chunky’ setting.
And that’s it – 30 minutes later you’ll be enjoying a tasty Mediterranean vegetable soup!
Soup Maker Mediterranean Vegetable Soup
Ingredients
- 300 g courgette approx
- 1 pepper any colour
- 1 red onion
- 2 cloves garlic
- 4 tomatoes
- 400 g chickpeas tinned
- 1 tbsp tomato puree
- 1 tsp dried mixed herbs
- 1 tsp black pepper
- 1 vegetable stock pot (plus water up to the line)
Instructions
- Prepare the ingredients by washing and chopping the courgette, deseeding and slicing the pepper, peeling and chopping the red onion, crushing the garlic cloves, washing and chopping the tomatoes.
- Add everything to the soup maker jug including the stock pot. Once all the ingredients have been added pour hot water up to the maximum line.
- Place the lid on the soup maker and choose the "chunky" soup setting.
- After 30 minutes the soup will be ready. Optionally give it a partial blend/pulse to make the soup thicker whilst keeping it as a chunky consistency.
