Slow Cooker Cajun Chicken Casserole

What You Need To Make Cajun Chicken Casserole

  • 8 boneless chicken thighs
  • 400g chopped tomatoes, tin or fresh
  • Onion
  • Sweet pepper – any colour or a combination of colours
  • 2 to 3 tbsp of Cajun seasoning
  • Salt and pepper to season

Making It In A Slow Cooker

It doesn’t get much easier than adding all the ingredients to the slow cooker.

And then, gently stir everything together until combined.

There is no need to add any water, the slow cooking of the ingredients will gently release enough liquid. Place the lid on top and set off on low for 6 to 8 hours or high for 3 to 4 hours. Check the chicken is cooked all the way through before serving.

You can gently pull apart for the chicken so that it is shredded or leave it as it is and serve them as whole thighs.

Serve with your choice of sides, I like it with some rice or potato wedges.

Ingredients

Instructions
 

  • Add everything to the slow cooker. There is no need to add any water or extra liquid.
  • Gently stir everything together.
  • Place the lid on top and set off on low for 6 to 8 hours or high for 4 hours.
  • At the end of the slow cooker cooking time check the chicken is cooked all the way through. You can optionally shred the chicken and stir it through the sauce, or serve the chicken thighs whole.
  • Suggested sides include rice or potato wedges.
