Slow Cooker Curried Pulled Pork

Slow cooking a pork joint is the ideal way to enjoy a soft and tender pull apart pork dish. I love making a pulled pork in my slow cooker, so I thought I’d try a variation on it and make a curried pulled pork.

What You Need For Curried Pulled Pork In A Slow Cooker

The ingredients below are enough to serve 4 people. Feel free to adjust the ingredients accordingly.

  • Boneless pork joint – approx weight 1.5kg – 2kg
  • Onion, garlic, peppers and chillies – the chillies are optional for a bit of extra heat
  • Passata – I used 400ml, you can substitute with a 400g tin of chopped tomatoes
  • Jar curry paste – I used a Waitrose own brand (the fiery one!) which was a 180g jar. You can use any curry paste.

To replace the passata and curry paste you can alternatively make your own curry sauce or buy a jar of curry sauce.

Making It

You’ll be pleased to know there is minimal preparation required for this recipe!

Prepare the ingredients by chopping the onion, peppers, chillies and crushing the garlic cloves.

Put the pork joint directly in the slow cooker and sprinkle the onion, peppers, chiilies and garlic over the top and around the joint.

In a bowl or jug, mix the curry paste in with the passata or chopped tomatoes (unless you are using a jar of curry sauce).

Pour it over the pork in the slow cooker.

Put the lid on and set the slow cooker off on low for 7 to 10 hours. The longer you can slow cook this for the easier the pork will fall apart and shred.

At the end of the slow cooking time carefully remove the pork from the slow cooker and place it on a chopping board or in a bowl. Remove the skin and string. Using two forks shred the pork before returning it to the slow cooker and stirring it to combine with the sauce.

Serve with your favourite sides. We enjoyed this with some potato wedges we cooked in the air fryer, but you could also have it with some boiled rice.

Ingredients
  

  • 1.5 kg to 2kg boneless pork joint
  • 1 jar curry paste I used 180g jar
  • 1 onion sliced
  • 3 cloves garlic crushed
  • 2 peppers chopped
  • 2 chillies sliced (optional)
  • 400 g passata or chopped tomatoes

Instructions
 

  • Add the pork to the slow cooker.
  • Add the onion, garlic, peppers and chillies.
  • Mix the curry paste with the passata/choppped tomatoes and pour over the pork joint.
  • Put the lid on and cook on low for 7 to 10 hours.
  • Remove the pork from the slow cooker and put on a chopping board or in a bowl. Remove the skin and any string. Using two forks, pull the pork apart and return it to the slow cooker, mixing it in with the sauce.
  • Serve with potato wedges, in tortilla wraps, with some naan bread, or over rice

Made this the other for my son and myself. Followed the recipe precisely (apard from doubled up on the onions), then served it with wholewheat long grain rice and mango chutney. It was fantastic and I haved frozen four portions to share later with more of my family. I just love tasty slow cooker recipes.
