If you’re looking to add some more spinach to your diet, adding it to a soup is the perfect way to enjoy it. This spinach and chickpea soup tastes great with some cumin and smoked paprika added in for extra flavour.

- 100g fresh spinach (about 2 large handfuls)
- 1 can (400g) chickpeas, drained and rinsed
- 1 medium onion, chopped
- 2 garlic cloves
- 1 medium potato, chopped
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 vegetable stock pot + hot water up to the line
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)

Making It
I started by adding the onion and garlic to the Ninja soup maker jug and pressing the ‘chop’ function.

Then I added the spinach, chickpeas, chopped potato, cumin and paprika.

Then I added the vegetable stock pot and hot water up to the maximum line.

Set the soup maker off on smooth.

Once the soup make cycle is finished, optionally season with salt and pepper and serve with your favourite soup toppings.


Soup Maker Spinach and Chickpea Soup

Ingredients

Instructions
- Add the spinach, chickpeas, chopped onion, garlic, chopped potato, cumin, paprika and vegetable stock to the soup maker. Top up to the MAX line of your soup maker with hot water.
- Set off on the smooth soup setting on your soup maker
- Once the soup is finished, optionally season with salt and pepper.
- Serve in bowls, and optionally garnish with fresh parsley for extra flavour.
