What You Need
You only need a few simple ingredients for this one, and most of them are easy to keep on hand. Butter beans are what give the soup its creamy texture, while the garlic is the main flavour, so don’t be shy with it.

How to Make It
Drain the butter beans and peel the garlic cloves. Add everything to the soup maker including the dried herbs, vegetable stock and optional salt and pepper.

Set the soup maker to the smooth soup setting and leave it to run through the full cycle.
Once the soup is ready, taste it and season with salt and black pepper as needed before serving.

This soup comes out at a medium consistency, if you want a thicker soup either reduce the amount of stock or add another tin of butter beans, or a chopped potato.

Variations & Tips
- I used 8 cloves of garlic for a stronger garlic flavour (and because in my opinion you can never have too much garlic!) but you can reduce this to 4 to 5 cloves if you prefer it milder.
- If the soup turns out thicker than you would like, stir in a little extra hot stock or water at the end.
- A drizzle of olive oil on top works well before serving.
- This soup is lovely with crusty bread or toast on the side.
- You can top it with a few reserved butter beans, chopped parsley, or extra black pepper for serving.
- Make sure to drain the butter beans before adding them to the soup maker.

Storage & Reheating
- Store any leftovers in an airtight container in the fridge for up to 3 days.
- Freeze for up to 3 months.
- Reheat on the hob or in the microwave until piping hot.
- If it thickens after chilling, add a splash of water or stock when reheating.
