This Ninja Creami Lemon Sorbet is wonderfully refreshing, with a bright, sharp lemon flavour that is perfect for a warm day.
For this recipe, I decided to test the Lemon Sorbet recipe included in the Ninja Kitchen recipe booklet, following the ingredients and quantities exactly as written.
It is a really simple recipe, made with just four ingredients: caster sugar, golden syrup, water and fresh lemon juice. Once everything is mixed together, the base is frozen for 24 hours before being processed using the Sorbet setting on the Ninja Creami.
If you enjoy lemon desserts, this is a lovely one to try.

The following ingredients and quantities are exactly as listed in the Ninja Kitchen recipe booklet.

Caster Sugar
You will need 100g of caster sugar. This is dissolved in the warm water before the sorbet base is frozen.
Golden Syrup
Add 1 tablespoon of golden syrup. This adds sweetness and also helps with the texture of the finished sorbet.
Hot Water
You will need 210ml of hot water, ideally between 60°C and 70°C as specified in the Ninja recipe.
The water needs to be warm enough for the sugar to dissolve easily.
Lemon Juice
Finally, add 100ml of lemon juice.
I used lemon juice to make the recipe exactly as instructed in the Ninja Kitchen booklet. If squeezing fresh lemons, the number you need will vary depending on their size and how juicy they are.
How To Make Lemon Sorbet In A Ninja Creami
Start by adding the caster sugar, golden syrup and warm water to a large bowl. Give everything a good whisk until the sugar has completely dissolved.

Next, pour in the lemon juice and whisk again until everything is well combined.
Pour the mixture into your Ninja Creami tub, pop the lid on and place it on a flat surface in the freezer for 24 hours.

When you’re ready to make the sorbet, take the tub out of the freezer, remove the lid and set it up in your Ninja Creami.
Select the Sorbet programme and let the machine do its thing.

Once it’s finished, check the consistency. If it’s nice and smooth, you can scoop it out and serve it straight away. If it looks a little crumbly or powdery, simply run it through the Re-Spin programme and it should come together nicely.
Do You Need To Re-Spin Lemon Sorbet?
You might.
Ninja advises using the Re-Spin function if the sorbet comes out crumbly after the first processing cycle.

This is quite normal with Ninja Creami recipes, especially with lower-fat frozen desserts such as sorbets. A Re-Spin can help bring everything together into a much smoother consistency.
Does Ninja Creami Lemon Sorbet Need To Freeze For 24 Hours?
For this recipe, yes.
The Ninja Kitchen instructions specify freezing the lemon mixture for 24 hours before processing it.
Make sure the tub is sitting upright on a flat surface while it freezes so that the mixture freezes evenly.
What Does Lemon Sorbet Taste Like?
This is very much a proper lemon sorbet rather than a creamy lemon ice cream.
The lemon juice gives it a fresh citrus flavour, while the sugar and golden syrup balance out some of the sharpness.

Storing Leftover Lemon Sorbet
If you don’t eat all of the sorbet straight away, smooth the surface over in the tub, replace the lid and return it to the freezer.
When you want some more, you may find it has frozen quite firm again. If necessary, process it again using the appropriate Ninja Creami programme or Re-Spin until it returns to a scoopable texture.

Instructions
- Add the caster sugar, golden syrup and warm water to a large bowl. Whisk until the sugar has completely dissolved.

- Pour the mixture into an empty Ninja Creami tub, secure the lid and place the tub on a flat surface in the freezer for 24 hours.
- Once completely frozen, remove the lid and assemble the tub in your Ninja Creami according to the instructions for your model.
- Select the Sorbet programme and allow it to process.
- Check the consistency once finished. If the sorbet is smooth and scoopable, serve straight away. If it looks crumbly or powdery, use the Re-Spin programme.
Notes
