Easy Air Fryer Lamb Steaks (with Garlic & Rosemary)

Cooking lamb steaks in the air fryer is quick, easy, and results in beautifully juicy meat with a flavour-packed outside. In this recipe, I’ve used a simple garlic and rosemary marinade to bring out the natural richness of the lamb.

It’s perfect for a weeknight dinner or a laid-back weekend lunch, these air fryer lamb steaks are delicious served with salad, flatbreads, or roast potatoes. You’ll only need a few ingredients, and the air fryer does the rest.

What You Need

Lamb Steaks: use 2 lamb leg steaks, roughly 150–200g each. These are ideal for air frying as they cook quickly and stay tender

Olive Oil: a couple of tablespoons helps the marinade cling to the meat and adds moisture while cooking.

Garlic: use 2 cloves of minced garlic – it goes perfectly with lamb.

Rosemary: fresh rosemary if you have it – 1 tsp finely chopped – but dried works too (½ tsp).

Cooking the Lamb Steaks in the Air Fryer

If you’ve got the time, let the lamb soak up all those flavours before cooking. Here’s how:

  1. In a bowl, mix together the olive oil, garlic and rosemary.
  2. Rub the marinade all over both sides of the lamb steaks.
  3. Cover and marinate for at least 30 minutes at room temperature, or up to 12 hours in the fridge.

Once your lamb is ready to go (marinated or just seasoned), place the steaks in your air fryer basket. Try not to overcrowd them – if you’re cooking more than two, do it in batches.

Cook at 200°C for:

  • 6–8 minutes per side for medium-rare
  • 8–10 minutes per side if you like it more well done

Keep an eye on them, and if you’ve got a meat thermometer, aim for 60–65°C in the centre for a perfect medium.

Once they’re done, take them out and let them rest for 5 minutes before serving. That little rest time helps lock in the juices so they’re nice and tender.

What to Serve with Lamb Steaks

These lamb steaks go with just about anything. Here are a few of my go-to sides:

  • Roasted new potatoes and a crisp green salad
  • Grilled veg like courgettes, red peppers, or aubergine
  • Couscous or flatbreads to soak up all the juices
  • A dollop of tzatziki or garlic yoghurt
  • A few torn mint leaves and a squeeze of lemon on top

Ingredients
  

  • 2 lamb steaks approx. 150–200g each
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tbsp fresh rosemary finely chopped (or 1 tsp dried)

Instructions
 

  • In a small bowl, mix together the olive oil, garlic and rosemary.
  • Rub the marinade all over both sides of the lamb steaks.
  • Leave to marinate for at least 30 minutes at room temperature, or up to 12 hours in the fridge.
  • Place the lamb steaks in the air fryer basket, making sure they’re not overlapping.
  • Air fry at 200°C for: 6–8 minutes per side for medium-rare or 8–10 minutes per side for medium to well done. (For accuracy, use a meat thermometer – aim for 60–65°C in the centre for medium.)
  • Let the steaks rest for 5 minutes before slicing or serving.
