Asparagus Soup (In A Soup Maker)

Asparagus is one of those vegetables that can be prepared and cooked in many different ways. Asparagus soup requires very few extra ingredients added to it to turn it into a tasty and satisfying dish.

According to the website British Asparagus, asparagus is available from April until June.  There are so many delicious ways to cook asparagus, whether it is as a sautéed side dish, in a salad, or as a soup, I like to try and use the whole of the asparagus. 

How To Make Asparagus Soup In A Soup Maker

Asparagus soup so easy to make, requiring such little preparation, it really is a case of washing it, chopping it and then adding it to the soup maker.

What You Need

The ingredients below are perfect for a Ninja Soup Maker, but it can be made in any soup maker (I’ve previously made it in my Morphy Richards Soup Maker).

  • Asparagus – I used about 400g, chopped up – I saved a couple of the tips for garnish. Gently sautè them in some butter and garlic and add them to the bowl on serving.
  • Onion, garlic and celery – I added 1 medium onion, 1 clove of garlic and 2 sticks of celery.
  • Potato – I used a medium potato (weighing around 150g). Adding a potato is optional, you could use more asparagus instead.
  • Vegetable stock – I used 1 vegetable stock pot, added directly to the soup maker and then poured hot water up to the line.
  • Salt and pepper – optional to taste.

Making The Soup

Prepare the ingredients for the soup by washing and chopping everything. There is no need to peel the potato, just give it a good wash before adding it.

Add everything to the soup maker, including the stock pot or cube. Add some hot water up to the line. Place the lid on the soup maker and set it off on smooth.

Most soup makers are powerful enough that they will blend the asparagus up into a velvety smooth soup. I didn’t need to put it through a sieve at the end to get rid of any lumps or stringy bits. 

How Can I Make Cream Of Asparagus Soup?

At the end of the soup cycle you can just stir in some cream (single or double), or if you prefer, use some yoghurt or crème fraiche. If your soup maker has a blending function you can use this, or just stir it round with a spoon. You can also wait and stir it in once the soup is in a bowl.

Can I Make This Soup Without A Soup Maker?

Yes you can. Just follow the same recipe, adding everything to the pot, bringing it to the boil, then turn down the heat to a simmer for around 20 minutes, or until the asparagus is soft.

If you want it smooth you will need to use a hand blender at the end, or add it to a regular blender to whizz it smooth (check with your blender manual to ensure you can add hot liquids to it).

Depending on the power of your blender you may need to additionally put the soup through a sieve to remove any lumps or stringy bits.

Ingredients
  

  • 400 g asparagus chopped into small pieces
  • 1 medium onion chopped
  • 1 clove garlic crushed
  • 1 medium potato chopped
  • 2 sticks celery finely sliced
  • 850 ml vegetable stock

Instructions
 

  • Add all the ingredients to your soup maker. Optionally reserve some asparagus tips for garnish. You can fry them in a little butter and garlic while the soup is cooking.
  • Set off on smooth.
  • Serve and season according to taste.

Once the soup make cycle has finished, stir in some cream (single or double), or yoghurt or creme fraiche.

Garnishing With Asparagus Tips

You can set aside some of the asparagus tips to garnish the soup with. Just gently saute them in a little oil or butter with some crushed garlic.

Made the cream of asparagus soup today..... Totally yummy! Should feed 4 but two of us managed most of it as it was so moreish . Thanks Lana!!
