Air Fryer Garlic and Herb Pork Medallions

Jump to Recipe Print Recipe

These air fryer garlic and herb pork medallions are quick and easy to make, with a delicious mix of garlic, herbs and paprika. They cook in around 10 minutes and are perfect for a simple midweek dinner.

Pork fillet is a lean, tender cut of meat that works really well in the air fryer. Serve the medallions with potatoes, rice or your favourite vegetables.

What You Need

For exact quantities, see the recipe card at the bottom of the post.

You only need a few ingredients to make these air fryer pork medallions.

  • Pork fillet: Also known as pork tenderloin, this is a lean and tender cut of pork. Slice it into medallions approximately 2.5cm thick.
  • Olive oil: Helps the seasoning coat the pork and keeps it from drying out during cooking.
  • Garlic: I used fresh crushed garlic, but you can also use garlic paste or granules.
  • Dried mixed herbs: An easy way to add plenty of flavour. You could also use Italian seasoning or a mixture of thyme, rosemary and oregano.
  • Paprika: Adds a little colour and a mild, smoky flavour if you use smoked paprika.
  • Salt and black pepper: To season the pork.

How to Make Garlic and Herb Pork Medallions in an Air Fryer

Start by patting the pork fillet dry with kitchen paper before slicing it into medallions, approximately 2.5cm thick.

In a bowl, mix the olive oil with the crushed garlic, dried herbs, paprika, salt and pepper.

Add the pork medallions and toss everything together until the pork is evenly coated in the seasoning.

Preheat the air fryer to 190°C for 3 minutes, if your model requires preheating.

Arrange the medallions in a single layer in the air fryer basket, leaving a little space between each piece.

Air fry at 190°C for approximately 10 to 12 minutes, turning halfway through.

The exact cooking time will depend on the thickness of the medallions and your air fryer. Check the thickest piece with a meat thermometer to make sure it has reached 75°C in the centre.

Leave the pork to rest for 3 to 5 minutes before serving.

Tips for the Best Air Fryer Pork Medallions

  • Cut the pork evenly: Try to make the medallions a similar thickness so they cook at the same rate.
  • Don’t overcrowd the basket: Leave a little space between the medallions so the hot air can circulate. Cook in batches if necessary.
  • Use a meat thermometer: Pork fillet is quite lean, so it can dry out if overcooked. A thermometer helps you check when it’s ready.
  • Mix the garlic with the oil: If you’re using fresh garlic or garlic paste, make sure it’s well mixed into the oil and seasoning to help prevent it burning.
  • Let the pork rest: A few minutes of resting before serving helps keep the meat juicy.

What to Serve with Air Fryer Pork Medallions

These garlic and herb pork medallions go well with lots of different side dishes.

Some ideas include:

  • Air fryer roast potatoes: A simple side that goes really well with the garlic and herb flavours.
  • Mashed potatoes: Especially good with a little gravy or creamy sauce.
  • Rice: Serve with plain rice or seasoned rice and some steamed vegetables.
  • Roasted vegetables: Try carrots, courgettes, peppers or broccoli.
  • Salad: For a lighter meal, serve with a mixed salad and some new potatoes.

You could also serve the pork with a creamy garlic sauce.

How to Store and Reheat

  • Allow any leftover pork medallions to cool, then transfer them to an airtight container and refrigerate within 2 hours.
  • Keep in the fridge for up to 48 hours.
  • To reheat, place the medallions in the air fryer at 160°C for a few minutes until piping hot all the way through. The exact time will depend on their thickness.
  • Be careful not to reheat them for too long, as pork fillet can become dry.
