Air Fryer Chicken, Chorizo and New Potatoes

This Air Fryer Chicken, Chorizo & New Potatoes recipe combines crispy chicken thighs, smoky chorizo, and perfectly roasted vegetables for a meal that’s as satisfying as it is simple. With just a handful of ingredients and minimal prep, you can create a dish that feels fancy enough for a weekend dinner but practical enough for weeknights.

Here’s what you’ll need to make this tasty recipe:

  • 4 -8 chicken thighs (depending on size): Bone-in and skin-on for the best flavour and crispiness.
  • 1 red onion: Chopped
  • 2 sweet bell peppers: Use your favourite colours—red, yellow, green or orange.
  • 500g new potatoes: Thinly sliced (around 0.5cm thick).
  • 100–150g sliced chorizo: Choose mild or spicy depending on your taste.
  • 2 tsp smoked paprika: Adds a smoky depth to the dish.
  • 2 tsp garlic granules: For a hint of garlicky goodness.
  • 2 tsp dried oregano: A classic herb that ties all the flavours together.
  • 2 tbsp olive oil: Helps everything crisp up beautifully.

I used a Cosori Dual air fryer (pictured below) to make this recipe, it’s great as it has a removable divider which meant I could make use of a larger space.

However, you can use other air fryer models to make this recipe but if they are smaller you may need to cook in batches, cook less, or if you have a dual without the removable divider, cook in seperate compartments and combine at the end.

How To Make It

Prepare the Potatoes

In a large bowl, toss the sliced new potatoes with 1 tablespoon of olive oil and 1 teaspoon each of smoked paprika, garlic granules, and oregano. Make sure they’re evenly coated.

Pre-cook the Potatoes

Place the seasoned potatoes in the air fryer basket and cook for 7–8 minutes at 200°C, shaking halfway through.

Season the Chicken

While the potatoes are cooking, pat the chicken thighs dry with kitchen roll. Brush or spray with olive oil, then season with the remaining smoked paprika, garlic granules, and oregano.

Add the Chicken

After the potatoes have cooked for 7–8 minutes, place the seasoned chicken thighs on top of the potatoes. Cook together for 15 minutes, turning the chicken halfway through to ensure even cooking.

Add Vegetables and Chorizo

Add the chopped peppers, onions, and sliced chorizo to the basket. Toss gently with the potatoes to coat them in the chorizo’s oils. Cook everything together for the final 10 minutes.

Check for Doneness

Ensure the chicken thighs have reached an internal temperature of 75°C. If needed, cook for an additional 2–3 minutes.

Serve and Enjoy

Plate up the chicken, potatoes, vegetables, and chorizo. Add some green vegetables or fresh salad as an optional side. Garnish with fresh herbs if you like.

Tips and Variations

  • Spice It Up: Add a pinch of chilli flakes or cayenne pepper to the chicken seasoning for a bit of heat.
  • Vegetable Swaps: Feel free to add courgette, cherry tomatoes, or your favourite veg.
