Move over, chips and chicken wings; it’s time to make some chicken fajitas in the air fryer!
I love Mexican food, especially fajitas – so I was really happy that they turned out so well in the air fryer – it only took 15 minutes to cook the chicken and the vegetables.
What You Need

This recipe was enough to make eight fajitas; you can adjust the serving sizes according to how many you want to make.
Chicken
I used six small boneless chicken thighs cut into strips. You can also use chicken breasts; I would use four chicken breasts to serve four people.
Onion
You can use a red or white onion to cut into chunks or slices.
Mixed Sweet Peppers
I used three mixed sweet peppers, deseeded and cut into chunks.
Fajita Seasoning
You can use a fajita seasoning mix or make it yourself if you have the spices. Fajita spice mixes vary, but combining the following should give you a good blend.
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 2 tsp ground oregano
- 1 tsp chilli powder
Chipotle Paste
This is an optional ingredient; I like to add chipotle paste to give the fajitas an extra kick, but you don’t have to include it.

If you do, mix 1 tbsp of the paste with 2 tbsp of olive oil, the fajita spice mix and the juice of half a lime.

Lime
I used the juice of half a lime. I added the lime juice in with the chipotle paste (see above) – if you are not using the paste too, you can just squeeze it over the chicken and spice mix (see steps below for instructions).
Air Fryer
I made this in a Proscenic T22 Air Fryer (I’m currently reviewing it), but it would work in any air fryer model.
Making Air Fryer Fajitas
If you have time, marinating the chicken will add extra flavour, even if it’s just for ten minutes.
To Make Fajita Marinade:

Mix 2 tbsp olive oil, 2 tbsp fajita spice mix, juice of half a lime, and, if you use it, 1 tbsp chipotle paste.
Slice the chicken up into strips and add it to the marinade bowl. Ensure the chicken is coated in the marinade by stirring it around. Leave for a minimum of ten minutes.
Prepare The Vegetables
While the chicken is marinating, cut up the onion and peppers.
Preheat The Air Fryer
A few minutes before you are ready to use it, switch the air fryer on and set the temperature at 200°C/390°F.
Add The Chicken
Once the chicken is ready, transfer it to the air fryer basket. For now, leave the vegetables to one side. Cook the chicken for ten minutes, checking on it at 5 minutes to give it a good shake.
Add The Vegetables
After ten minutes, open the air fryer and add the peppers and onion. Stir everything together. Close the air fryer and cook for a further five minutes.
At the end of the cooking time, the chicken should be cooked through (cut into one slice to make sure it is), and the vegetables will be slightly soft but still have some crunch.
Transfer the Fajita Mix
Once the fajita mix is ready, transfer it to a bowl and serve in a tortilla wrap with some salsa and guacamole, on a jacket potato or with some rice.

Air Fryer Chicken Fajitas
Ingredients
- 6 boneless chicken thighs or 4 chicken breasts
- 1 onion chopped
- 3 sweet peppers deseeded and sliced
- 2 tbsp fajita spice mix*
- 1 tbsp olive oil
- 1 tbsp chipotle paste **
- Juice of half a lime
Instructions
- Slice the chicken into strips.
- Mix the oil, fajita spice, chipotle paste, and lime juice in a bowl.
- Add the chicken strips to the bowl and leave to marinate for at least ten minutes.
- While the chicken is marinating, prepare the onions and peppers by chopping them into equal-sized pieces.
- Preheat the air fryer to 200C/390F.
- Transfer the chicken to the air fryer basket and air fry for 10 minutes, shaking halfway through.
- Add the vegetables and stir through. Close the air fryer and cook for a further 5 minutes.
- Transfer to a bowl and serve in a tortilla wrap with salsa and guacamole.
