Bread Maker Multigrain Loaf

If you are looking for more bread machine recipes, this multigrain bread maker loaf is made using the Panasonic SD-YR2540 on the Whole Wheat setting, and it’s ideal for a wholesome, hearty slice of toast or a chunky sandwich. The Eight Grain flour mix by Matthews Cotswold works great, no extra grains or seeds are needed.

What You Need

Eight Grain Flour (or similar)

Use a pre-mixed multigrain bread flour, available in most supermarkets or online. These typically include a blend of whole wheat flour and grains such as rye, barley, oats, and seeds. There’s no need to add anything extra—the mix does all the work for you. I used 600g of flour to make an XL loaf.

Butter

I used 40g of unsalted butter or you could use a neutral oil such as 2 tbsp of sunflower or light olive oil.

Sugar

Helps activate the yeast and adds a hint of sweetness. It also contributes to a golden crust, I used 2 tbsp of sugar.

Salt

I used 2 tsp salt.

Water

Use 420ml of room temperature water. This keeps the dough at an ideal temperature during the early stages.

Dried Yeast

I added 1¼ tsp of yeast to the dispenser so it releases at the correct time during the cycle.

Making It

Add the ingredients to your bread pan in this order: flour, butter, sugar, salt, water and then insert the bread tin to the bread maker before closing the lid and adding the dry yeast to the yeast dispenser.

Choose the following settings:

Menu: 7 – Whole Wheat

Size: XL

Crust: Medium or Dark (your preference)

Press Start – the machine will handle everything: kneading, rising, and baking. The full cycle takes 5 hours.

When the program finishes, carefully remove the loaf, turn it out onto a wire rack, and allow it to cool for at least 30 minutes before slicing. This helps the crumb set properly and makes slicing much easier.

This loaf is ideal for sandwiches, hearty toast, or served alongside a warm bowl of soup. Its nutty, grainy texture holds up beautifully to both sweet and savoury toppings.

  • tsp dried yeast

Instructions
 

  • Add the ingredients to the bread pan in the order listed above.
  • Place the pan into the machine and add the yeast to the yeast dispenser.
  • Select menu 7 (whole wheat), XL and your preferred crust setting. Press start.
  • Once baked, remove the loaf and place on a wire rack.
  • Allow to cool for at least 30 minutes before slicing.

Hi Liana I made the Matthews 8 grain loaf earlier today and I've just had the first slice what a wonderful loaf it produces. When I bought the flour from Tesco I also purchased their Cotswold Crunch flour, can you tell if I can use the same recipe as the 8 grain recipe. I have been following your recipes since purchasing a soup maker several years ago and follow all of your various excellent recipes and have passed on your details to several friends who now follow you.
