Celery and Tomato Soup in a Soup Maker
Ingredients
- 4-5 large tomatoes roughly chopped
- 3-4 celery sticks/ribs chopped
- 1 medium onion quartered
- 2 garlic cloves
- 1 medium potato (approx 200g) washed and chopped
- 1 vegetable stock pot or chicken stock, if preferred
- 1/2 tsp dried thyme
- 1/2 tsp dried basil
- salt and pepper to taste
- 1 tsp sugar optional
Instructions
- Roughly chop the tomatoes, celery, onion, and potato.
- Add the onion and garlic to the soup maker to chop it up (if using a soup maker with a chop function).
- Add the tomatoes, celery, potato, herbs (and sugar if using) to the soup maker jug.
- Add the stock pot and pour hot water to the line.
- On your soup maker, choose the smooth soup function. This will cook and blend the ingredients perfectly for a smooth, creamy consistency. The cycle usually takes about 30 minutes.
- Once the cycle is complete, carefully taste the soup. Adjust the seasoning with salt and pepper as needed.
- Pour the soup into bowls and garnish with a drizzle of olive oil or fresh herbs like parsley or basil, if you like.

Notes
To make it richer, stir in a splash of cream or a knob of butter after cooking.
