This chicken tortilla soup is packed with flavour and goodness – and it’s also a super satisfying lunch that will keep you feeling full until dinner time.

What You Need
The ingredients below were used to make this soup in a Ninja soup maker. For more concise instructions and to print this recipe out please head to the card at the bottom of this post.
- 1 onion, chopped
- 2 cloves garlic, crushed
- 1 jalapeño, finely chopped (or 2 to 3 tbsp from a jar)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 400g can of chopped tomatoes
- 2 boneless, skinless chicken breasts
- 1 can (400g) black beans, drained and rinsed
- 1 can (150g) sweetcorn
- Juice of half a lime
- 1 x chicken stock pot
- Fresh coriander, chopped (for garnish)
- 2 x small tortillas or 1 large
- Grated cheese, avocado slices, and sour cream (optional, for serving)
Making It
Start by quartering the red onion and peeling the garlic cloves. Add to the soup maker jug, put the lid on and press the chop function.
Add all the remaining ingredients; jalapeño, ground cumin, smoked paprika, dried oregano, chopped tomatoes, boneless, skinless chicken thighs, black beans, sweetcorn, lime juice and chicken stock pot.

Top with hot water up to the line.
Set off on chunky.
Prepare the Tortilla Strips
While the soup maker is working it’s magic, cut the tortilla up into slices and brush with oil.
You can season with a little salt, or smoked paprika. Either fry in some oil in a pan on the hob or air fry at 180°C for 5, or until crispy.
Pour soup into bowls and top with the tortilla slices and optionally grated cheese, avocado slices, coriander etc.

- 150 g tin of sweetcorn

- 1 chicken stock pot
- Fresh coriander chopped (for garnish)
- 2 x small tortillas or 1 large
Instructions

- Pour soup into bowls and top with the tortilla strips.
- Optionally add some grated cheese, avocado slices, fresh coriander for additional toppings.
