I like to occassionally add some fruit for a twist on a classic soup recipe. This broccoli and apple soup only has a few ingredients and is quick and easy to prepare.
What You Need
I made this soup in a Ninja soup maker but you can make it in any soup maker. To print out the recipe head to the recipe card at the bottom of the page.
- 1 onion, peeled and quartered
- 2 cloves garlic, peeled
- 1/2 teaspoon each ground black pepper and salt
- 1 large broccoli head, cut into florets (about 400g/500g)
- 2 medium apples, cored, and chopped
- 1 vegetable stock pot or cube (and hot water up to the line)
Making It
I added the quartered onions and garlic cloves directly to the soup maker jug, popped the lid on and then used the ‘CHOP’ function to chop them up.

Next, add the chopped two apples – I don’t bother to peel them, I just remove the core and cut up.
Then, I added the broccoli florets. Don’t worry too much if the ingredients go over the MAX line, as long as there is a little space at the top. You must however make sure the liquid doesn’t go above this line.
Optionally add some salt and pepper to season, followed by the vegetable stock pot or cube and hot water up to the line.
Put the lid on and set off on smooth. The cycle will take 30 minutes. At the end of the cycle carefully remove the lid and serve, or save the soup for later.

Ninja Soup Maker Broccoli and Apple Soup
Ingredients

Instructions
- Add the quartered onions and garlic cloves directly to the soup maker jug. Put the lid on and then use the ‘CHOP’ function to chop them up.
- Add the chopped apples, broccoli, salt and pepper and vegetable stock pot or cube.
- Fill up to the MAX line with hot water.
- Set the soup maker off on smooth.
- At the end of the soup maker cycle, serve and season according to taste.
