Minestrone is the ultimate comfort soup – hearty, nutritious, and full of delicious flavours. This soup maker recipe makes it quick and easy to whip up a warm, satisfying bowl of homemade minestrone, perfect for busy days or when you’re craving something wholesome.

1 Onion, Chopped
A classic base for soups, onions add a depth of flavour to the minestrone. Red or white onions work equally well, or use shallots for a milder taste.
2 Cloves Garlic, Crushed
If you’re out of fresh garlic, half tsp of garlic powder works, or, some frozen garlic.
100g Bacon, Chopped
Bacon adds a smoky, savoury note to the soup. You can swap it for pancetta or leave it out entirely for a vegetarian version. Smoked paprika is a great spice alternative if you want to mimic the smoky flavor.
2 Carrots (Approx. 200g), Chopped
Carrots bring natural sweetness and vibrant colour to the soup. You can substitute with parsnips for a slightly earthier taste or use frozen pre-chopped carrots to save time.
Large Handful of Cabbage (Approx. 50g), Shredded
Cabbage is a classic ingredient in minestrone. You can use any leafy green you prefer, such as kale, spinach, or even frozen cabbage for convenience.
2 Sticks Celery, Chopped
If you don’t have celery on hand, try substituting with chopped fennel or courgette.
1 tbsp Tomato Purée
This thick, concentrated ingredient enhances the tomato flavuor and gives the soup a rich, vibrant color.
400g Can Chopped Tomatoes
Tomatoes form the heart of a good minestrone. Choose a good-quality tinned variety for the best flavour. You can also use fresh tomatoes, finely chopped, or passata for a smoother texture.
400g Can Cannellini Beans, Drained and Rinsed
Cannellini beans add protein and creaminess to the soup. You can swap them with other beans, such as kidney beans, chickpeas, or butter beans, for a slightly different texture and taste.

100g Small Pasta Shells
Pasta shells give the soup its hearty texture. Feel free to use any small pasta shape you like, I used “Margheritine Soup Pasta” from Tesco.
1 Vegetable Stock Cube/Pot
You can use chicken stock if you’re not vegetarian, or try a low-sodium version if you’re watching your salt intake. Homemade stock is always a great choice if you have it!
Making It
Chop everything up really small, you can use the pulse function (if your soup maker has one) to chop the celery, onion, garlic and carrots up even smaller.

Add everything else to the soup maker – apart from the pasta shells.

Then top up to the line with hot water.

As the pasta shells I used only needed 8 minutes to cook I added these through the hole on the lid at around the 20 minute mark of the chunky cycle. Depending on the pasta type you are using you might want to add them earlier or later, or even cook seperately and stir in at the end.
At the end, check the consistency, if it’s too thick add a little hot water and stir until you are happy with it.

Ingredients
- 1 onion chopped
- 2 cloves garlic crushed
- 100 g bacon chopped
- 2 carrots (approx 200g), chopped
- 50 g cabbage shredded (I used frozen)
- 2 sticks celery chopped
- 1 tbsp tomato puree
- 400 g can chopped tomatoes
- 400 g can cannellini beans drained and rinsed
- 100 g small pasta shells
- 1 vegetable stock cube/pot
Instructions
- Chop the vegetables up really small – this can be done by hand or using the pulse function of a Ninja Soup Maker or similar.
- Add all the ingredients to the soup maker apart from the pasta. I added the pasta shells at the 20 minute mark, or you can simply stir them in cooked at the end.
- Add hot water up to the line and stir the ingredients together.
- Set the soup maker off on chunky.
- At the end of the soup maker cycle check the consistency of the soup, you may need to add more hot water and stir if it is too thick.
