Thai Red Curry Soup tastes amazing in the soup maker! Similar to my Chicken Tikka Masala Soup this soup is based on a favourite curry dish that can be had as a soup, or made more substantial by adding in some cooked noodles or rice.
I have made this recipe, or variations of it, in various different soup makers over the years including the Morphy Richards and the Ninja Soup Maker and Blender. It works well in all types of soup makers but you will have to adjust each one slightly depending on the machine you are using.

Chicken
If you are using the Ninja Soup Maker you can add raw chicken straight to the soup maker. I used either chicken breast or thighs. If you have a different soup maker such as the Morphy Richards you will need to use cooked chicken. This is a handy recipe to make with any leftover meat from a roast chicken, or you can also just brown up some chopped chicken.
Thai Red Curry Paste
There are plenty of Thai Red Curry Pastes available to buy at the supermarket. I used one from Blue Dragon, but you can use which type you like, some might be spicier than others. You can even make your own Thai Curry Paste and get the heat level just how you like it.
Update: my favourite Thai Red curry Paste is currently Mae Ploy Red Curry Paste which can be bought on Amazon or in some supermarkets or international food stores.
Note that different curry pastes have varying heat levels. The Mae Ploy curry paste is much hotter than Blue Dragon and so less curry paste should be added. If in doubt add less the first time you make it.
Other Ingredients
- garlic and ginger – use fresh, frozen or a paste
- red chilli – I used a fresh red chilli, feel free to leave this out, I just really love the extra chilli 🙂
- coconut milk – I used 200ml of coconut milk which was enough to give it a more soup consistency, you could use the whole tin and reduce the stock if you want a thicker texture
- spring onions – optional garnish at the end
- shallots – when I first published this recipe I didn’t have any onions or shallots but I thought I would add them in this time and they work well, but feel free to leave them out, or use an onion instead
- lemongrass and kaffir lime leaves – I’ve tried to keep the recipe list as simple as possible without compromising on the taste. If you don’t have, or can’t get hold of kaffir lime leaves and lemongrass stalk, these can be substituted with the zest of half a lime and half a lemon
- chicken stock – I used 700ml but you may need less depending on the other ingredients you are using
- rice noodles – this time I used rice noodles as it meant I could just submerge them at the end of the cooking time, but you could add egg noodles, rice, or not add anything at all

Making It
If your soup maker has a sauté function, start by adding a little oil along with the spring onions, garlic and ginger. Sauté for about a minute, then stir in the Thai red curry paste.
Add the chicken, shallots, chilli, lemongrass, kaffir lime leaves, coconut milk and chicken stock. Remember that you can add raw chicken to the Ninja Soup Maker, but it should be cooked first if you are using a Morphy Richards.

In the Ninja Soup Maker
Select the chunky soup programme. However, if you are using a dried lemongrass stalk, use the Manual Cook setting and cook the soup for 30 minutes instead. This prevents the lemongrass from being caught up in the two pulse stages of the chunky programme.
At the end of the cooking time, remove the lemongrass stalk and kaffir lime leaves. Add the rice noodles, pushing them down so they are submerged in the hot soup and can soften.

In a Morphy Richards Soup Maker (or similar)
Use cooked chicken and select the chunky soup programme. You can stir in some cooked noodles or rice at the end to make the soup more substantial. Remove the lemongrass and kaffir lime leaves at the end if you are using them.
Serve straight away, with some fresh coriander scattered over the top if you like.

Thai Red Curry Soup

Ingredients
- 300 g chicken approx 2 breasts or thighs (cooked if using Morphy Richards, or raw if using Ninja, see notes below)
- 4 shallots optional
- 2 cloves garlic crushed
- 1 tbsp ginger grated/1tsp ground ginger, or frozen
- 2 tbsp Thai Red Curry Paste depending on the brand
- 1 lemongrass stalk*
- 2 kaffir lime leaves*
- 1 red chilli chopped
- 4 spring onions chopped
- 200 ml coconut milk
- 700 ml chicken stock
- 50 g rice noodles
Instructions
In Morphy Richards Soup Maker:
- Optional: sauté garlic & ginger for 1 min
- Switch off sauté and add red curry paste, stir well to mix in with garlic & ginger.
- Add remaining ingredients and stir well to make sure nothing is stuck to the base of the soup maker.
- Set off on chunky.
- Stir in cooked noodles/rice if you wish.
- Optionally garnish with fresh coriander.
In Ninja Soup Maker:
- Optional: Add oil, spring onions, garlic and ginger to the blender jug.
- Press the sauté button.
- Add remaining ingredients, apart from noodles.
- Press the 'chunky soup' button. Or, if you are using a dry lemongrass stalk, choose the manual cook button and set off for 30 minutes.
- At the end of the soup maker cooking time, take off the lid and remove the kaffir lime leaves and lemongrass (if using). Submerge the rice noodles (or stir in cooked noodles or rice)
- Optionally garnish with fresh coriander.
Notes
If You Are Using The Ninja Soup Maker
You can use raw meat in the Ninja – just chop the chicken breasts up into 2.5cm pieces and add with the other ingredients.Nutrition
