There’s nothing quite like the rich, buttery taste of homemade brioche bread – and the good news is, you can make it with very little effort in a bread maker. This recipe is from the booklet that came with the Panasonic Bread Maker (SD-YR2540).
Brioche is a French bread enriched with butter and eggs, giving it a soft crumb and a gorgeous flavour. It’s perfect for breakfast, as part of a weekend brunch, or even for making a decadent French toast.

What You Need

Yeast – 1¼ tsp dried yeast.
Strong white bread flour
Cold butter (first portion) – 60g, cubed into roughly 2cm pieces.
Sugar – 50g white granulated sugar for sweetness.
Skimmed milk powder – 2 tbsp, helps give a tender crumb.
Eggs and water – Beat two whole eggs, then add just the yolks of the other two eggs. Top up to 270ml total liquid with water.
Cold butter (second portion) – 80g, cubed into roughly 2cm pieces, added later in the cycle.
Keep the butter in the fridge until you are ready to use it.

Making It
Prepare the egg mixture by beating two whole eggs together with the yolks of the other two eggs. It’s best to do this in a measuring jug so that you can then top up with water to the 270ml line.

Add the ingredients to the bread maker tin, strong white bread flour, the first (60g) portion of cold butter, sugar, skimmed milk powder and the egg and water mixture.

If your bread maker has a seperate yeast dispenser put it in there, if not, add it in with the other ingredients in the tin. Don’t add the final 80g of butter for now (keep it in the fridge still).

Select Menu 10 (Brioche) on your Panasonic bread maker and press start. The total program time is about 3 hours and 30 minutes.

At around the 45-minute mark, the bread maker will beep. This is your cue to open the lid, add the remaining 80g of cold butter cubes, and press start again. The machine won’t continue until you do.
Once the cycle finishes and you hear the final beep, carefully remove the bread pan from the machine. Turn the loaf out onto a wire rack to cool before slicing.

Serving Ideas
Brioche is wonderfully versatile. Try it spread with jam or honey for a quick breakfast, toasted with butter for a simple snack, as the base for indulgent French toast or bread and butter pudding, or for savoury dishes – it makes an excellent burger bun substitute or pairs beautifully with soft cheeses.

How Long It Lasts
Fresh brioche is best enjoyed on the day it’s made, but it will keep for up to 3 days in an airtight container at room temperature.
If you want to store it for longer, slice it and freeze in a freezer-safe bag for up to 2 months. You can toast it straight from frozen.

Instructions
- Add the ingredients in the order listed above, placing the yeast into the bread maker’s yeast dispenser. Leave the second portion of butter aside for now.
- Select the brioche program (Menu 10) on your Panasonic bread maker and press start. The cycle takes about 3 hours and 30 minutes.
- Around 45 minutes in, you’ll hear a beep – that’s your signal to lift the lid, pop in the remaining 80g of cold butter cubes, and press start again. The machine won’t carry on until you do.
- When the final beep sounds, carefully remove the bread pan from the machine. Tip the loaf onto a wire rack and let it cool before slicing.
