Cauliflower Korma Soup (in a Soup Maker)

This Korma-Inspired Cauliflower Soup is the perfect comforting blend of gentle spices, creamy texture, and wholesome vegetables taking its flavour inspiration from the popular Indian korma curry.

It’s perfect for a tasty lunch or a light dinner, especially if you enjoy curried soups without too much heat. Made in a soup maker, it’s quick, easy, and fuss-free.

What You Need To Make Korma-Inspired Cauliflower Soup

I made this recipe in the Ninja Soup Maker on the smooth setting but it can , such as the Ninja Soup Maker or Morphy Richards models. It makes around 4 servings.

Onion and Garlic

A classic base for most soups. You can use fresh or frozen chopped — both work well.

Cauliflower

Use around 500g to 600g of cauliflower florets. Fresh or frozen both work well. If using a whole cauliflower, chop it into small florets for quicker cooking.

Korma Paste

A heaped teaspoon is enough for a gently spiced flavour. You can add more for a stronger curry taste. I used Patak’s Korma Paste, but any brand will do.

Vegetable Stock

Use one vegetable stock pot or cube, topped up with hot water to the soup maker’s line. Adjust for your machine’s capacity.

Fresh Coriander

Stir it in at the end for a burst of freshness, or blend it for a more vibrant green colour. You can leave it out if you’re not a fan of coriander.

Salt and Pepper

Season to taste once the soup is blended. You may not need much if your stock pot is already well-seasoned.

Single Cream (Optional)

Adding 50ml to 100ml of cream at the end is optional.

Making It

This is one of those wonderfully easy soup recipes where your soup maker really does all the hard work. Here’s how to bring it all together:

Add the Ingredients

Start by popping the chopped onion, crushed garlic, cauliflower florets, korma paste, and vegetable stock into your soup maker. No need to be too precise — just aim to keep the total liquid below the maximum line. If you’re using frozen ingredients, they can go in straight from the freezer.

Select the Smooth Setting

Once everything’s in, choose the smooth soup setting. In the Ninja it takes 30 minutes from start to finish.

Add the Finishing Touches

When the soup is done, stir in the fresh coriander and the single cream if you’re using it. The cream makes it extra velvety and rich, but it’s totally optional. If your soup maker has a manual blend option, give it a quick blitz for about 10 seconds to mix everything in evenly.

Taste and Adjust

Now’s the time to taste. Add a little salt and pepper if needed, then ladle it into bowls and enjoy while it’s hot and comforting.

Ingredients
  

  • 1 onion chopped
  • 1 garlic clove crushed
  • 600 g cauliflower florets fresh or frozen
  • 1 vegetable stock pot + hot water to soup maker fill line
  • 1 heaped teaspoon korma paste
  • Fresh coriander to stir in or garnish
  • Salt and pepper to taste
  • 50 ml–100ml single cream optional

Instructions
 

  • Add the onion, garlic, cauliflower, korma paste, and vegetable stock to your soup maker.
  • Select the smooth setting.
  • Once complete, add the fresh coriander and the cream (if using).
  • Manually blend for 10 seconds.
  • Taste and adjust seasoning with salt and pepper.
  • Serve hot, with naan or crusty bread on the side if desired.

Notes

  • Frozen onion, garlic, and cauliflower can be used straight from the freezer.
  • For a dairy-free version, simply leave out the cream or use a plant-based alternative.
