Celery and Leek Soup (in a Soup Maker)

Leeks and celery are often the base of many soups, but they shine just as well on their own. This easy soup maker recipe combines them with onion, potato, garlic, and herbs for a light yet comforting soup. It’s smooth, creamy (even without cream), and perfect for a quick lunch or starter.

What You Need

Leeks – their mild, slightly sweet flavour works beautifully once cooked down. Make sure to rinse them well after slicing, as dirt can hide in the layers.

Celery – three sticks are enough to balance the leeks without being overpowering.

Potato – helps thicken the soup naturally. You can peel it or just give it a good scrub and leave the skin on.

Onion + Garlic – these can be chopped, or you can add them to the Ninja soup maker and use the CHOP function.

Vegetable Stock – you can use homemade stock if you have it, or a cube/pot with hot water. Just pour in up to the MAX line in your soup maker.

Thyme or Mixed Herbs – a teaspoon of dried thyme works well, or you can use dried mixed herbs if that’s what you have on hand.

Seasoning – a little salt and freshly ground black pepper to taste.

Optional Cream or Milk – for a richer finish, stir in a splash just before serving.

Making Leek & Celery Soup In The Soup Maker

This recipe couldn’t be simpler. Just add the prepared vegetables, garlic, and herbs straight into the soup maker. Pour in stock up to the MAX line, season lightly, and select the smooth setting.

Once the cycle has finished, check the seasoning and adjust to your taste. If you’d like it a little creamier, stir through a splash of cream or milk.

Serving Suggestions

This soup is lovely with a slice of crusty bread or a warm baguette. For something heartier, serve it alongside a grilled cheese sandwich.

It also makes a great make-ahead lunch, just store in the fridge for up to three days, or freeze in portions for later.

Ingredients
  

  • 1 onion chopped
  • 2 garlic cloves
  • 300 g leeks trimmed, washed, and sliced
  • 150 g celery chopped
  • 150 g potato chopped (skin on or off)
  • 750 ml vegetable stock* or a stock pot/cube with hot water up to the MAX line
  • 1 tsp dried thyme or dried mixed herbs
  • Salt and black pepper to taste
  • Optional: A splash of cream or milk to finish

Instructions
 

  • Add the leeks, celery, potato, onion, garlic, and herbs to the soup maker.
  • Pour in stock up to the MAX line and season lightly.
  • Select the smooth setting.
  • Once the cycle finishes, taste and adjust seasoning.
  • Stir through a splash of cream if you’d like a richer finish.

Notes

*either add a stock pot or cube directly to the soup maker and then top up to the maximum line with hot water, or prepare the stock seperately and pour in (again, up to the maximum line). 
I have used Bouillon Vegetable Stock powder, for lower salt content switch to a lower or no salt variety.
