This courgette and basil soup is packed with flavour and green goodness. It’s really easy to prepare, simply add the chopped ingredients to your soup maker and you’ll soon be enjoying a tasty courgette soup.
What You Need
The quantities below are for the Ninja soup maker which has a capacity of 1.4L – but they can be adapted for any soup maker by adjusting the amount of courgettes.
- Onion & garlic – I used 1 onion and 2 cloves of garlic
- Courgettes – I used 750g of chopped courgettes, you can use more or less. If you don’t have enough courgettes you can add in a potato to make sure the soup has a thick enough consistency.
- Vegetable stock – I used a stock pot but you can use a cube, powder or your own homemade stock. I topped up with hot water to the MAX line in the soup maker.
- Basil – I used a large handful of fresh basil leaves, these were blended in at the end.
- Optional for serving – courgette and basil soup tastes delicious with some grated parmesan cheese stirred in.
If you want to make a thicker and creamier soup, stir in some cream before serving.
Making It
Prepare the ingredients by washing and chopping the courgettes. Peel and quarter the onion, peel the garlic cloves.
Add the onion and garlic cloves to the Ninja soup maker and press the chop function.
Add the courgettes and vegetable stock pot. Top up to the line with hot water.

Set the soup maker off on the smooth function.
When the soup maker has finished, remove the lid and add the fresh basil leaves to the soup. Put the lid on and blend on high for about 15 seconds, or until the basil leaves have all chopped up and blended in with the courgette soup.
Do a taste test and add any seasoning if required.
Optionally sprinkle some grated parmesan cheese on top on serving.
