Roasted Red Pepper, Tomato and Chorizo Soup

Roasted red pepper, tomato and chorizo soup is smoky, rich and full of flavour. Sweet roasted peppers blend beautifully with paprika-spiced chorizo, creating a warming soup that feels special but is still simple to make.

What You Need

Below is a quick overview of what you’ll need. Scroll down to the recipe card for the full ingredient list and exact measurements.

Onion and Garlic
You can use fresh or frozen.

Roasted Red Peppers
You can use jarred roasted peppers for convenience, or roast fresh peppers yourself (more on this below).

Chopped Tomatoes
A tin of chopped tomatoes works perfectly here, but you can also roast fresh tomatoes for a deeper flavour.

Chorizo
Adds a smoky richness to the soup. Reserve a small portion to use as a topping.

Smoked Paprika
Enhances the smoky flavour of the chorizo, an optional extra.

Vegetable Stock
Alternatively you could use chicken stock.

Salt and Pepper
Season to taste at the end.

How To Make It

This soup comes together very quickly, especially if you are using a jar of red peppers and a tin of chopped tomatoes.

Start by roughly chopping the onion and adding it straight to the soup maker along with the garlic. There’s no need to be too precise here as everything will be blended at the end.

Next, add the roasted red peppers and the tin of chopped tomatoes. Slice the chorizo into small pieces and add most of it to the soup maker, remembering to keep about 25g aside so you can crisp it up and use it as a topping later. You can of course add all the chorizo to the soup maker now and skip using any as a soup topping. Sprinkle in the smoked paprika for an extra boost of smoky flavour.

Pour in the vegetable stock, making sure you don’t go above the maximum line on your soup maker.

Select the smooth soup setting and let the soup maker run through its full cycle. For the Ninja soup maker this is 30 minutes.

While the soup is cooking, heat a small frying pan over medium heat and cook the reserved chorizo pieces for a few minutes. As it cooks it will release its oils and become slightly crispy, perfect for sprinkling over the finished soup.

Once the soup maker has finished, give the soup a taste and season with salt and pepper if needed.

Ladle the soup into bowls and finish with the crispy chorizo pieces on top before serving.

Roast Your Own Peppers and Tomatoes (Optional)

If you prefer, you can roast the peppers and tomatoes instead of using jar or tinned versions.

Oven Method

  1. Preheat the oven to 200°C (180°C fan).
  2. Cut 3–4 red peppers into large chunks and remove the seeds.
  3. Chop 3–4 medium tomatoes or use around 400g fresh tomatoes.
  4. Place the peppers and tomatoes on a baking tray with 2–3 cloves of garlic.
  5. Drizzle lightly with olive oil and roast for 20–25 minutes, until softened and slightly charred.
  6. Add everything to the soup maker.

Air Fryer Method

  1. Preheat the air fryer to 180°C.
  2. Add chopped red peppers, tomatoes and garlic to the basket.
  3. Drizzle lightly with oil and cook for 12–15 minutes, shaking halfway through, until softened and lightly roasted.
  4. Allow them to cool slightly before adding to the soup maker.

Variations & Tips

  • Make it spicier – Add a pinch of chilli flakes or a fresh chilli.
  • Make it vegetarian – Leave out the chorizo but add a teaspoon of smoked paprika.
  • Make it chunkier – Use the chunky soup setting instead of smooth.
  • Add extra vegetables – A carrot or celery stick can be added for extra flavour.

Ingredients
  

  • 1 onion chopped
  • 2 cloves garlic crushed
  • 350 g roasted red peppers jar or roast your own
  • 400 g chopped tomatoes tin or roast your own
  • 125 g chorizo sliced
  • 1/2 tsp smoked paprika
  • 700 ml vegetable stock
  • salt and pepper

Instructions
 

  • Roughly chop the onion and add it to the soup maker along with the garlic.
  • Add the roasted red peppers, chopped tomatoes, most of the chorizo (keeping about 25g aside for topping), and the smoked paprika.
  • Pour in the vegetable stock, making sure it stays below the maximum fill line.
  • Select the smooth soup setting.
  • While the soup is cooking, heat a small frying pan over medium heat and cook the reserved chorizo pieces for a few minutes until slightly crispy.
  • When the soup maker cycle has finished, taste the soup and season with salt and pepper if needed.
  • Serve the soup in bowls and sprinkle the crispy chorizo pieces over the top.

Notes
