Carrot and swede soup is one of those simple, comforting soups that works perfectly in a soup maker. The natural sweetness of the carrots balances beautifully with the slightly earthy flavour of the swede, creating a smooth and warming bowl of soup with very little effort.

This recipe uses just a handful of everyday ingredients and lets the soup maker do all the work. It’s a great option for an easy lunch or light dinner, especially on colder days when you want something warming but not too heavy.

I actually made this one after picking up a swede as part of a Too Good To Go purchase. It’s a great reminder that soups are perfect for using up vegetables you might not normally buy, just chop them up, add a few simple ingredients, and let the soup maker do the work.
- Onion

- Dried mixed herbs

Swede can sometimes feel like a slightly forgotten vegetable, but it works wonderfully in soups, adding a gentle sweetness and helping to create a lovely creamy texture once blended.
Making It
Start by preparing the vegetables. Peel and chop the swede into small chunks. Peeling the carrots is optional, but do chop them into small chunks too so that they cook easily during the soup cycle. Roughly chop the onion and crush the garlic.

Add the onion, garlic, swede and carrots straight into the soup maker jug. Sprinkle over the dried mixed herbs, then pour in the vegetable stock, making sure everything stays below the maximum fill line. It worked out to be around 800ml of vegetable stock.

Put the lid on and select the smooth soup setting. The soup maker will cook and blend everything for you during the cycle.

Once the soup maker finishes, give the soup a quick taste and season with salt and pepper if needed. The carrots add natural sweetness, so you may find it doesn’t need much seasoning at all. If the soup is too thick, add some more hot water or stock and blend it in.
Serve hot with some crusty bread if you like.

Variations & Tips
- Add a potato if you prefer an even thicker, creamier soup.
- Use fresh herbs such as thyme instead of dried mixed herbs for a slightly fresher flavour.
- Add a pinch of chilli flakes if you like a little gentle heat.
- Stir in a splash of cream at the end for a richer version.
- Top with croutons or pumpkin seeds for added texture.
Storage & Reheating
- Fridge: Store in an airtight container for up to 3 days.
- Freezer: This soup freezes well for up to 3 months.
- Reheating: Warm gently in a saucepan or microwave, adding a little extra water or stock if it has thickened.
