What You Need
Below is a quick overview of what you’ll need. Scroll down to the recipe card for the full ingredient list and exact measurements.

- Spring onions (use most in the soup, reserve a little for garnish)
- Garlic cloves
- Ground ginger
- Green chillies (jalapeños or green finger chillies both work – adjust to taste)
- Boneless chicken thighs
- Light coconut milk
- Potato (for natural thickening)
- Fresh lime juice
- Chicken stock
How to Make It
Start by preparing all your ingredients. Chop the spring onions (reserving one for garnish), finely chop the garlic, slice the chillies, dice the potato and cut the chicken thighs into small bite-sized pieces.

Add everything, except the reserved spring onion, to your soup maker: chicken, chillies, garlic, spring onions, potato, ground ginger, coconut milk, lime juice and chicken stock. Set your soup maker to the chunky or smooth setting, either works well.

If you’re using a Ninja Soup Maker, you can use raw chicken as it cooks during the cycle. For other soup maker models, use cooked chicken (unless the manufacturer advises otherwise).
Ladle into bowls and finish with the reserved finely sliced spring onion on top.

Variations & Tips
- Heat level: Use 1–2 chillies depending on preference. Jalapeños are milder; green finger chillies are usually hotter.
- Extra freshness: Add a handful of chopped fresh coriander before serving.
- Richer version: Swap light coconut milk for full-fat for a creamier result.
- No potato: You can leave the potato out for a thinner, broth-style soup.
Storage & Reheating
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat gently on the hob or in the microwave until piping hot.
- If the soup thickens on standing, simply stir in a little extra stock or hot water when reheating.
- This soup can be frozen for up to 3 months.

Chicken, Coconut and Green Chilli Soup (in a Soup Maker)

Ingredients
- 4 spring onions chopped
- 3 cloves garlic crushed
- 1 tsp ground ginger
- 2 green chillies see note 1
- 350 g boneless chicken thighs see note 2
- 400 g coconut milk
- 150 g potato chopped
- 1 lime juice
- 700 ml chicken stock approx
- salt and pepper according to taste
Instructions
- Add all the ingredients to the soup maker – but I like to reserve one of the spring onions to sprinkle on top for garnish at the end.
- Set the soup maker off on smooth or chunky, I quite like this soup smooth, but you can have it either way.
- At the end of the soup maker cycle carefully remove the lid. Serve and sprinkle with the reserved chopped spring onion. Season if required.
Notes
Use 1–2 green chillies depending on how spicy you like your soup. Jalapeños are milder, while green finger chillies tend to be hotter. Note 2 – Chicken
If using a Ninja Soup Maker you can add raw chicken thighs as they cook during the cycle. For other soup maker models, use cooked chicken unless the manufacturer confirms raw meat is safe to use.
