Soup Maker Courgette Soup – A Quick and Tasty Recipe

With just a few ingredients and a soup maker you’ll soon be enjoying the delicious simplicity of this tasty soup.

🛒 What You Need

  • Courgettes – I used two, washed and chopped. They weighed about 500g.
  • Onion & Garlic – I used a medium onion and 2 cloves of garlic.
  • Potato – adding a potato is optional, I used a medium potato to thicken the soup up a little. It weighed around 175g. There is no need to peel the skin, just wash and chop.
  • Dried mixed herbs – I used 1 tsp, you can use any herbs, for example thyme, rosemary etc
  • Vegetable stock pot or cube – I add this direct to the soup maker and then top up with hot water.
  • Salt and pepper, to taste
  • 100ml cream (optional, for serving)

👩‍🍳 Making It

Preparation: Wash the courgettes and chop them into chunks. Peel and chop the onion, crush or slice the garlic, and wash and chop the potato into small pieces.

Add Ingredients to Soup Maker: Place the chopped courgettes, onion, garlic, chopped potato and dried herbs into the soup maker jug. Add the vegetable stock pot or cube directly to the jug and top up with water, taking care not to exceed the max fill line.

Cook: Place the lid on your soup maker and set it to the smooth soup setting. Most soup makers will cook the soup in about 20-30 minutes, blending the ingredients into a smooth consistency.

Serve: Once the soup maker has finished its cycle and your soup is ready, give it a taste and adjust the seasoning if necessary.

Enjoy: Serve your courgette soup hot with some crusty bread on the side. I also love to stir in a little cream or grated cheese – yum!

🥣 How To Store Courgette Soup

If you have some leftover soup, once it has cooled down, transfer to an airtight container and keep in the fridge for up to 3 days, or the freezer for 3 months.

  • 500 g courgettes roughly chopped

Instructions
 

  • Wash the courgettes and chop them into chunks. Peel and chop the onion, crush the garlic, and chop the potato into small pieces.
  • Add everything to the soup maker jug, including the vegetable stock pot or cube and top up with hot water, taking care not to go over the MAX line.
  • Place the lid on your soup maker and set it to the smooth soup setting.
  • When the soup is ready serve and season if required. Optionally stir in a little cream or grated cheese.

Wonderful best soup we’ve made so far ,just about to do another batch.We’ve an allotment and the courgettes are doing over time at the moment so thanks great way to use them .
