Ingredients
- 500g chicken breast (approx)
- 2 peppers, any colours
- 1 courgette
- 1 red onion
- Cherry tomatoes
For The Marinade
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
Making It
Prepare the Ingredients
Prepare the ingredients by cutting the chicken into approximately 1-inch cubes. Chop the peppers, courgette, and onion to roughly the same size. The cherry tomatoes can remain the same size.
Marinate the Chicken and Vegetables
In a large bowl, whisk together the olive oil, lemon juice, crushed garlic, paprika, oregano, salt, and pepper.
Add the chicken pieces and the vegetables to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes.
Assemble the Kebabs
If you are using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Thread the marinated chicken and vegetables alternately onto skewers.
Cook in the Air Fryer
Place the skewers in the air fryer basket, ensuring they don’t touch each other. Depending on the size of your air fryer, you may need to cook them in batches.
I have cooked kebabs in various styles of air fryers, including the Ninja dual models, multi-cooker models, and the more classic air fryer square basket.
Air fryer accessories, such as trivets, kebab holders, and dehydrator racks, can help squeeze more skewers in without overcrowding.
Cook for 10-15 minutes at 200°C/400°F, turning the skewers halfway through, until the chicken is cooked and the vegetables are slightly charred.
Serving the Kebabs
Optionally serve the chicken kebabs hot, garnished with fresh herbs such as parsley or coriander.
A side of tzatziki sauce or a squeeze of fresh lemon juice over the top can add a refreshing twist.
Tips and More Information
- Marinating Time: For the best flavour, marinate the chicken for as long as possible.
- Vegetable Choices: Substitute the vegetables with what you have available. Mix and match the dish with other vibrant vegetables, such as aubergine, to make the dish even more colourful.
- Meat Options and Substitutes: You can prepare these kebabs with pork, beef and lamb. Alternatively, make it a meat-free kebab and use Quorn or tofu instead.
