This Chicken Fajita Tray Bake is an easy, high-protein dinner that’s perfect for busy weeknights. Everything cooks together in one tray, with juicy chicken breast, colourful peppers, and red onions coated in fajita seasoning and fresh lime juice. Serve it with rice, wraps, or your favourite toppings for a simple family meal that requires very little hands-on preparation.

This recipe uses simple ingredients that come together to create plenty of flavour with minimal effort.

- Chicken breast
- Mixed peppers
- Red onions
- Fajita seasoning
- Olive oil
To serve (optional):
- Cooked rice or tortilla wrap
- Fresh coriander

- Low-fat Greek yoghurt
How to Make It
Start by preheating your oven to 200°C (180°C fan).
Add the sliced chicken breast, peppers, and red onions to a large roasting tray. Drizzle over the olive oil and squeeze over the lime juice, then sprinkle over the fajita seasoning.

Using your hands or a couple of spoons, toss everything together until the chicken and vegetables are evenly coated in the seasoning.
Spread everything out into a single layer and place the tray in the oven. Cook for 25 to 30 minutes, giving everything a quick stir halfway through cooking.

As the tray bake cooks, the peppers and onions will soften and become slightly caramelised, while the chicken takes on all the flavours from the seasoning and lime juice.
Once the chicken is cooked through, remove the tray from the oven and serve straight away with rice, wraps, or your favourite toppings. A spoonful of salsa, some fresh coriander, and a dollop of Greek yoghurt work particularly well.
