Air Fryer Chicken Parmesan with Cherry Tomatoes

You’ll only need a few simple ingredients:

  • 2 chicken breasts
  • 300g cherry tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon dried mixed herbs
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper
  • Around 40g grated parmesan (or as much as you like!)
  • Fresh parsley, chopped

How to Make Air Fryer Chicken Parmesan

Place the chicken breasts and cherry tomatoes into a large bowl. Drizzle over the olive oil and toss everything together so the chicken and tomatoes are lightly coated.

Sprinkle over the dried mixed herbs, paprika, salt and pepper, then toss again until everything is evenly seasoned.

Arrange the chicken breasts in your air fryer basket in a single layer. Scatter the cherry tomatoes around and between the chicken so they have plenty of room to cook and blister.

Air fry at 190°C for 15 minutes, turning the chicken over about halfway through cooking and giving the basket a shake to move the tomatoes around.

Check the chicken is fully cooked through. The easiest way is to use a meat thermometer, the thickest part of the chicken should reach 75°C.

Sprinkle the grated parmesan over each chicken breast and return everything to the air fryer for another 1 to 2 minutes, just until the cheese has melted.

Leave the chicken to rest for a couple of minutes before sprinkling over some freshly chopped parsley.

Serve immediately.

Recipe Tips

  • If your chicken breasts are particularly large or thick, they may need a few extra minutes. Always check they have reached 75°C before serving.
  • Smaller chicken breasts may cook a little quicker, so start checking them after around 13 minutes.
  • Freshly grated parmesan melts more evenly than pre-grated varieties.

Variations

  • Add a pinch of chilli flakes for a little heat.
  • Add sliced courgette, red onion or mushrooms to cook alongside the tomatoes for an easy one-basket meal.

What to Serve With It

This chicken is delicious served:

  • On its own for a lighter meal.
  • With warm crusty bread.
  • Alongside roasted baby potatoes or air fryer potatoes.
  • With a simple green salad.

Storing Leftovers

Store any leftovers in an airtight container in the fridge for up to 3 days.

Reheat in the air fryer at 180°C for 3 to 5 minutes, or microwave until piping hot throughout.

Although you can freeze the cooked chicken, the tomatoes become much softer once thawed, so this recipe is best enjoyed fresh.

Can I use chicken thighs instead?

Yes. Boneless, skinless chicken thighs work well but may need a little longer to cook depending on their size.

Do I need to preheat the air fryer?

Most air fryers don’t require preheating, but if your model recommends it, simply follow the manufacturer’s instructions.

Can I make this for more people?

Absolutely. Simply double the ingredients and cook in batches if needed so the basket doesn’t become overcrowded.

Why add the parmesan at the end?
