Chipotle Chicken & Black Bean Soup (in a Soup Maker)

Jump to Recipe Print Recipe

This chicken chipotle soup is packed with tender chicken, black beans, tomatoes and peppers, with a lovely smoky flavour from the chipotle paste.

It’s a filling, protein-rich soup that’s really easy to make in the Ninja Soup Maker. Everything goes straight into the jug, and the chunky soup programme takes care of the cooking.

I served mine with grated mature cheddar cheese and crispy tortilla strips made in the air fryer.

What You Need

For exact quantities, see the recipe card at the bottom of the post.

Chicken – I used chicken breast, chopped into small pieces. You can also use boneless chicken thighs if you prefer. If you are using a Ninja Soup Maker you can use raw chicken. For most other soup makers you will need to use chicken that is already cooked.

Black Beans – they work really well in this soup, adding extra protein and fibre while making it more filling. Drain and rinse them before adding to the soup maker.

Chopped Tomatoes – one 400g tin of chopped tomatoes forms the tomato base of the soup.

Onion, Garlic and Red Pepper – these add plenty of flavour and some extra vegetables. I used fresh ingredients, but frozen chopped onion, garlic and peppers would also work.

Chipotle Paste – this is what gives the soup its smoky, slightly spicy flavour. I used 2 teaspoons, but you can adjust the amount depending on how spicy you like your soup.

Tomato Purée – adds a little extra richness to the tomato base.

Cumin and Smoked Paprika – these complement the chipotle paste and give the soup a lovely smoky, warming flavour.

Chicken Stock – use your favourite chicken stock. You may need to adjust the amount depending on how much space is left in the soup maker.

How to Make Chicken Chipotle Soup in a Ninja Soup Maker

This is a really easy soup to prepare, with no need to fry or sauté anything beforehand.

Start by chopping the chicken into small pieces, along with the onion and red pepper. You can also use frozen chopped vegetables to save a bit of time.

Add everything to the Ninja Soup Maker, starting with the chicken, beans, tomatoes and vegetables, followed by the chipotle paste, tomato purée and spices.

Pour in the chicken stock, being careful not to go above the maximum hot fill line. You might not need all of the stock, depending on how much room is left in the jug.

Pop the lid on and select the Chunky Soup programme, then leave the Ninja to do its thing!

Once it’s finished, check that the chicken is cooked all the way through and give the soup a taste. You can add a little extra seasoning if needed.

I gave the soup a few short bursts of blends to get a slightly thicker consistency and to break down some of the chicken, beans and vegetables without making the whole soup smooth.

Serving Suggestions

I served this soup with grated mature cheddar cheese and crispy tortilla strips, which made it even more tasty.

To make the tortilla strips, simply slice a tortilla wrap into thin strips and cook them in the air fryer until golden and crispy. Keep an eye on them as they can brown quite quickly. I sprinkled half of the grated cheese on the tortilla strips for the last 30 seconds in the air fryer, the melted cheese on the tortilla strips is very tasty.

I used one Mission tortilla wrap and 30g of mature cheddar cheese for my portion.

You could also serve the soup with a squeeze of fresh lime juice, chopped coriander or a spoonful of sour cream.

Tips and Variations

  • Adjust the spice: Start with less chipotle paste if you prefer a milder soup, or add a little extra for more heat.
  • Use kidney beans: If you don’t have black beans, kidney beans would also work well.
  • Make it thicker: Give the finished soup a short pulse to blend some of the beans and chicken into the broth.
  • Add some sweetness: Sweetcorn would make a nice addition if there’s enough room in the soup maker.
  • Use frozen vegetables: Frozen chopped onions, peppers and garlic are handy alternatives to fresh ingredients.

Can You Store Leftover Chicken Chipotle Soup?

  • Yes. Allow the soup to cool quickly before transferring it to an airtight container.
  • Store in the fridge for up to 48 hours, or freeze for up to 3 months.
  • Reheat thoroughly until piping hot throughout. If the soup has thickened during storage, add a splash of stock or water.
