Chicken Fajita Soup in a Soup Maker

If you love chicken fajitas, this chicken fajita soup is a delicious way to enjoy those familiar flavours in a warming bowl of soup.

It’s made with chicken, peppers, onions, chopped tomatoes and a combination of fajita seasoning and smoked paprika.

Everything goes straight into the soup maker, making it a really easy recipe to prepare with minimal effort.

How to Make Chicken Fajita Soup in a Soup Maker

This is a simple soup maker recipe that doesn’t require any sautéing or preparation beyond chopping the ingredients.

I made this chicken fajita soup in my Ninja Soup Maker using the chunky setting, so the chicken and vegetables stayed in pieces rather than being blended into a smooth soup. It can also be used in a different type of soup maker such as a Morphy Richards soup maker. However, you will need to use precooked chicken as recommended by the manufacturer.

What You Need

Chicken

You can use boneless chicken thighs, chicken breast or boneless chicken drumsticks. This was actually the first time I’d tried using boneless chicken drumsticks in my soup maker, and I’m pleased to say they worked just as well as boneless chicken thighs. They stayed tender during cooking and worked really well in this chunky soup.

Whichever cut you choose, chop the chicken into small, evenly sized pieces before adding it to the soup maker.

Onion

I used a regular brown onion, roughly chopped. There’s no need to chop it too finely as it will soften during the cooking programme.

Peppers

You can use any colour peppers you like. Red, yellow and orange peppers will give the soup a slightly sweeter flavour, while green peppers have a less sweet taste. I used frozen sliced peppers for this recipe, which are really handy to keep in the freezer for soups and other recipes.

Garlic

Two crushed garlic cloves adds some extra flavour without overpowering the other ingredients.

Chopped tomatoes

One standard tin of chopped tomatoes forms the tomato base of the soup and works well with the peppers and fajita spices.

Fajita seasoning

Fajita seasoning is an easy way to add plenty of flavour without needing lots of individual spices. You can use your favourite shop-bought fajita seasoning mix.

Smoked paprika

Smoked paprika adds a lovely smoky flavour that works particularly well with the chicken, peppers and tomatoes.

Chicken stock

I used chicken stock to add flavour and provide the liquid needed for the soup. Always check the minimum and maximum fill levels of your soup maker. Depending on the size of your machine and the volume of your ingredients, you may need to reduce the stock slightly.

Making Chicken Fajita Soup

Step 1 – Peel and roughly chop the onion and peppers, crush the garlic and dice the chicken into small, evenly sized pieces.

Step 2 – Add the onion, peppers, garlic, chicken, chopped tomatoes, fajita seasoning and smoked paprika to the soup maker.

Step 3 – Pour in the chicken stock, making sure everything stays within the maximum fill line.

Step 4 – Put the lid on and select the Chunky programme. Leave the soup maker to run through the complete cooking cycle.

Step 5 – Taste the soup and add salt and black pepper if needed before serving. I stirred in some grated cheese at the end too.

Tips and Variations

  • Make it spicier: Add a pinch of chilli flakes or a little extra fajita seasoning if you prefer a soup with more heat.
  • Add tomato purée: Stir in a tablespoon of tomato purée before starting the programme for a richer tomato flavour.
  • Use frozen ingredients: Frozen sliced peppers, onions and garlic work well in this soup and save a little preparation time.
  • Try different cuts of chicken: Boneless thighs, breasts and drumsticks can all work well, provided they are cut into appropriately sized pieces and fully cooked.
  • Adjust the consistency: For a slightly thicker soup, use less stock, provided you still meet your soup maker’s minimum liquid requirements.
  • For a more filling meal: Add some chopped potatoes or a tin of drained blackbeans. I would give the soup a quick short blend or pulse at the end to change up the consistency.

How to Store Chicken Fajita Soup

In the fridge – allow the soup to cool quickly before transferring it to an airtight container. Store it in the fridge for up to 48 hours. Reheat until piping hot throughout before serving.

In the freezer – chicken fajita soup is suitable for freezing, making it a useful recipe to prepare ahead. Once cooled, divide it into freezer-safe containers, leaving some room for expansion. Freeze for up to 3 months for best quality. Defrost overnight in the fridge before reheating until piping hot throughout.

What to Serve with Chicken Fajita Soup

This soup is filling enough to enjoy on its own, but you could also serve it with some crusty bread or warm tortilla wraps cut up and mixed in. For more of a fajita-inspired meal, try adding a little grated cheese, a spoonful of soured cream or some crushed tortilla chips just before serving.

Ingredients
  

  • 1 onion roughly chopped
  • 2 peppers any colour, roughly chopped
  • 1 clove garlic crushed
  • 350 g chicken thighs, breast or drumsticks
  • 400 g chopped tomatoes
  • 3 tsp fajita seasoning
  • 1 tsp smoked paprika
  • 700 ml chicken stock

Instructions
 

  • Add the onion, peppers, garlic, diced chicken, chopped tomatoes, chicken stock, fajita seasoning and smoked paprika to your soup maker.
  • Select the Chunky setting and leave the programme to complete.
  • Taste and season with salt and black pepper if needed.
